Flank Steak

Intense in meaty, beefy flavour. A thinner and coarser cut. Best for marinating and grilling or slicing thin against the grain and stir-frying.

Hind Shank

Richly flavourful, brown this cut before cooking for added caramelization. Best for braising and simmering in soups and stews.

One of the most tender cuts of beef. Well-marbled with intense beef flavour. Quick and convenient to cook, try grilling, broiling, or pan-frying.

Top Sirloin Medallion

Lean steak cut steakhouse-style for easy, convenient cooking. Extremely tender with a rich, beefy flavour.


Cooking Tips

Pat Dry: Get the perfect sear and a delicious crust by patting your steak dry with a paper towel.If your steak is too moist when it hits the grill or the pan, it can steam instead of sear.

Season: Enhance the natural flavour of your steaks by seasoning properly. We like using Farm Boy™ Coarse Kosher Salt for its texture as well as its superior capabilities in dry brining and searing. Freshly ground black pepper, like the kind found in our Black Peppercorn Grinder, is also an excellent choice. If you like adding a crust to your steaks, consider trying our Pepper Steak Seasoning, which is made without any additives, artificial preservatives, or colours.

Temp Check:Depending on how you like your steak, you’ll want to determine if it’s rare, medium-rare, medium, medium-well, or well-done. A probe-style digital thermometer inserted into the thickest part of the steak takes out the guesswork. Steak continues to cook as it rests, so the following temperatures are when you should pull your steak for that level of doneness.

  • Rare: 118°F
  • Medium-Rare: 125°F
  • Medium: 136°F
  • Medium-Well: 143°F
  • Well-Done: 154°F

Rest: For a steak that remains tender and juicy, don’t slice into it right away. Allow your steak to rest for five to 10 minutes. During this time, it will continue to cook until the appropriate temperature is reached.

Frenched Bone-In Rib Steak with Garlic Flower Butter

When grilling season beckons, a show-stopping steak like this one is guaranteed to impress. This recipe shows the best of what this steak has to offer, with rich marbling and a juicy, beefy flavour. (“Frenched” simply refers to the process of cleaning the bones of the steak.) Simply adorned with a garlic flower butter, you can trust that when it comes from our butchers, it’s good food from good neighbours. Give this steak a quick sear to lock in all those luscious juices before grilling it low and slow. For the perfect medium-rare, pull your steak when the temperature reads 130°F. As it rests, it will continue cooking to 135-140°F for the perfect flavour and texture.

Korean beef ribs with green onions

Korean Style Beef Short Ribs

Flanken-style short ribs, also known as Asian short ribs, are thinly sliced, requiring a quick cooking time over high heat. This ensures the ribs stay flavourful and fall-off-the-bone-tender. We use a Korean-style marinade made with onion, pear, ginger, brown sugar, soy sauce, mirin, and sesame and allow the ribs to soak in the mixture overnight to really enhance the flavour. Ribs take marinade well and get extra flavourful with this recipe!

Beef Cut Used: Flanken-Style Beef Short Ribs

Mongolian Style Ground Beef

This simple recipe is full of flavour thanks to aromatics like ginger, garlic, sesame, and sambal oelek, a raw chili paste. Ready in under 30 minutes, it’s full of protein and fresh veggies for a wholesome, satisfying meal. We’ve served it over steamed rice, but you can opt for quinoa or noodles if you prefer. For those who can handle the heat, increase the amount of sambal oelek used. If you’re more sensitive to spice, you can reduce it and amp up the other flavours for an equally delicious (but milder) taste.

Slow Braised Beef with Mushrooms

For a dish that’s almost entirely hands-off, try this easy dinner idea. This recipe is for a stovetop version, but if you’re in more of a “set it and forget it” mood, simply throw all the ingredients (except for the pasta, sour cream, and parsley) in your slow cooker, turn it to low, and leave it for 6-8 hours. The result should be tender, easy-to-shred beef and meaty, flavour-enriched mushrooms. This recipe is ideal for cozy days when you want something nourishing and wholesome. Serve it with pasta, mashed potatoes, polenta, or a simple side salad.

Reverse Sear Beef Roast

Rather than a recipe, this reverse sear beef roast is more a technique for cooking. Using AAA sirloin tip oven roast from Canada Beef, we’ve slathered on a fragrant rub made from butter and seasonings. An impressive dish for when you have company, this method uses a cooling rack to promote air circulation to ensure a delicious, tender roast. We like serving it with classic sides like mashed potatoes (which you can found ready-made at our Hot Bar) and steamed green beans or broccoli.
