What makes peppers spicy?
All peppers can be measured on a scale known as the Scoville Scale which rates the amount of Scoville Heat Units (SHU) that peppers contain. The higher the number of units, the “spicier” they are. The units measure the amount capsaicin present within chili peppers—the chemical that creates spiciness and the heat sensation our taste buds experience. It is measured from a range of 0 SHU, like bell peppers, to 16,000,000 SHU, which is pure capsaicin!
