For the most part, there are two basic ingredients that make a great hot sauce: quality peppers and an acid (typically vinegar or citrus).

What Makes Peppers Spicy?

All peppers can be measured on a scale known as the Scoville Scale which rates the amount of Scoville Heat Units (SHU) that peppers contain. The higher the number of units, the “spicier” they are. The Scoville Heat Units measure the amount of capsaicin present within chili peppers. Capsaicin is the chemical that creates spiciness and the heat sensation our taste buds experience. It is measured from a range of 0 SHU, like bell peppers, to 16,000,000 SHU, which is pure capsaicin!
