Teriyaki Tofu and Udon Noodle Stir Fry
Noodle stir fries are quick to put together and oh so satisfying! We love the chewy texture of udon noodles, but if you prefer, you can substitute with rice noodles or even spaghetti. Adding tofu makes this plant-based dish more nutritious and wholesome, but you can swap the tofu for chicken, turkey, pork or beef. Feel free to use any type of cabbage or Asian greens – we opted for using the tender leaves and stems of gai lan. Tofu absorbs more flavour as it marinates, so if you have time, you can do that overnight. This is an easy, quick and delicious weeknight dinner! Stand Time: 1 hour
