Chicken Soup with Mushrooms and Asian Greens
Chef’s Tip: * If you want to make this a vegetarian soup, use Farm Boy™ Vegetable Stock and omit the chicken, using 200g firm tofu instead; make sure you use Tamari rather than soy sauce. * Dried shiitake mushrooms have really tough stems, make sure you remove them after soaking. * Swap out the chicken for shrimp for a different take on this soup – shrimp will take only a few minutes to cook. * Add ramen, rice or udon noodles for a heartier dish.
