Tuscan White Bean Stew

Chef’s Tips:
- This is a great, comforting, and satisfying dish. Make it vegan by switching out the broths.
- If you can’t find cannellini beans, use the same amount of white kidney or navy beans.
- If you want this to be more of a soup, simply increase the amount of broth.
- You can easily add some protein by cooking up some sausage before you add the veggies.
- This makes a large batch and it’s great for easy meals during the week.
Ingredients
- 2-3 Tbsp extra virgin olive oil, plus more for garnish
- 1 cup onion diced
- 1 cup carrot diced
- 1 1/4 cups celery diced
- 2-3 garlic cloves minced
- 1 tsp Farm Boy™ Organic Italian Seasoning Mix
- ½ tsp Farm Boy™ Organic Crushed Dried Chili Peppers or more to taste
- 1 tsp Farm Boy™ Organic Paprika
- 1 Tbsp Farm Boy™ Organic Tomato Paste
- 1 can Farm Boy™ Diced Tomatoes with Garlic, Basil and Oregano
- 3 x 400g cans cannellini beans drained and rinsed
- 2-3 cups Farm Boy™ Organic Chicken Bone Broth or Farm Boy™ Organic Vegetable Broth
- salt and pepper to taste
- 4 cups kale, Swiss chard, or baby spinach chopped
- crusty bread and lemon wedges to serve
Directions
- In large Dutch oven or pot, heat oil over medium-high heat. Add onion, carrot, celery, and garlic and sweat until translucent, about 5 minutes.
- Add Farm Boy™ Organic Italian Seasoning Mix, Farm Boy™ Crushed Dried Chili Peppers, and Farm Boy™ Organic Paprika and cook another minute.
- Add Farm Boy™ Organic Tomato Paste and Farm Boy™ Diced Tomatoes with Garlic, Basil, and Oregano and stir to combine.
- Add cannellini beans, 2 cups Farm Boy™ Organic Chicken Bone Broth or Organic Vegetable Broth and salt and pepper to taste. Bring to a simmer and cook, uncovered, for 30-35 minutes, stirring every so often, to let flavours develop. (If mixture dries up too much, add a bit more broth.)
- During the last 5 minutes of cooking, add greens and stir until wilted, about 2-3 minutes.
- Ladle into bowls, drizzle with a bit more olive oil and serve with lemon wedges and lots of crusty bread on the side.
