Wild Blueberry Baked Oatmeal Recipe

Chef’s Tips:
* Instead of wild blueberries, use mixed berries (fresh or frozen), chopped apples, or pears. You can also add dried fruit like apricots, raisins, cranberries, or even chocolate chips.
* Instead of maple syrup, you can use honey or coconut sugar to sweeten.
* Cut it into bars and freeze individually for an easy breakfast on-the-go.
Ingredients
- 1 ¾ cups Farm Boy™ Organic Milk, or plant-based milk
- ½ cup Farm Boy™ Amber Maple Syrup
- ¼ cup unsalted butter, melted or Farm Boy™ Organic Coconut Oil, melted
- 2 Farm Boy™ Large Omega 3 Eggs
- ¼ cup Farm Boy™ Organic Applesauce
- 3 cups Farm Boy™ Organic Large Flake Oats
- 1 tsp baking powder
- 1 tsp Farm Boy™ Organic Ground Cinnamon
- 1 tsp vanilla extract
- ¼ tsp salt
- ¼ cup Farm Boy™ Chia Seeds and/or hemp hearts
- ½ cup Farm Boy™ Walnuts chopped
- 1 ½ cups Farm Boy™ Wild Blueberries frozen
Directions
- Preheat oven to 350°F. Grease a 9” x 9” baking pan.
- In a large bowl, whisk together Farm Boy™ Organic Milk, Farm Boy™ Amber Maple Syrup, melted butter, Farm Boy™ Large Omega 3 Eggs, and Farm Boy™ Organic Applesauce.
- Add Farm Boy™ Organic Large Flake Oats, baking powder, Farm Boy™ Organic Ground Cinnamon, vanilla, salt, Farm Boy™ Chia Seeds, Farm Boy™ Walnuts, and Farm Boy™ Wild Blueberries and mix to combine. Let batter rest 5 minutes, then pour into greased pan.
- Bake for 35-40 minutes, until the centre is soft but set.
- Remove from oven and cool for 10 minutes. We like to serve it with Farm Boy™ Organic Greek Yogurt, berries, and a drizzle of Farm Boy™ Amber Maple Syrup.
