Scrambled Egg and Chorizo Breakfast Tacos

Making breakfast in 15 minutes or less is always a plus in my book, and one of the quickest and most satisfying breakfast items has to be tacos.

You can make these tacos vegetarian by smearing refried beans on the tortillas before adding scrambled eggs, or if you’re looking for other meat alternatives, you can substitute the chorizo with cooked bacon. Then for the toppings, you can add crumbled feta cheese or crema. So many possibilities!

If you’re looking for a delicious and quick, homemade protein-packed meal, these chorizo and egg tacos will make a great start to your day


  1. Remove Farm Boy™ Spanish Chorizo meat from casing.
  2. In medium frying pan, heat oil and cook sausage meat, breaking it up as it cooks, about 5 minutes.
  3. Add onion and continue to cook until onions are golden brown, another 3-5 minutes.
  4. Add eggs and salt and scramble.
  5. Cook until set, about 2-4 minutes.
  6. Warm up Farm Boy™ Yellow Corn Tortillas. Fill with chorizo and egg mixture.
  7. Top with avocado wedges, Farm Boy™ Fresh Salsa, and cilantro.
  8. Serve and enjoy!


  • 1 Tbsp Farm Boy™ Vegetable Cooking Oil (946 ml)
  • 120 g (1 sausage) Farm Boy™ Spanish Chorizo (240 g)
  • ½ cup onion diced
  • 4 eggs
  • salt to taste
  • Farm Boy™ Yellow Corn Tortillas (450 g)
  • Farm Boy™ Fresh Mild Salsa (450 g)
  • 1 ripe avocado sliced
  • cilantro leaves for garnish
