Falafel Wraps

Level up your Meatless Mondays with this easy vegetarian meal that’s perfect for busy weeknights or stress-free lunches. We turned to our Chef’s Market for help with this simple lunch idea, so most of the work is done for you—simply assemble and enjoy!

While we heated up the falafel and naan for this recipe, if your lunch area doesn’t offer you access to an oven, that’s not a problem. This falafel wrap is just as delicious served cold. Assemble it ahead of time and wrap in parchment paper for a to-go lunch that’s easy to prepare and enjoy. For an extra burst of acidic tang and crunch, layer in some of our Organic Sliced Dill Pickles

South of the Border Black Bean Salad

As easy on your wallet as it is tasty on your palate, this simple salad recipe is packed with enough protein and flavour to keep you satisfied through the afternoon. Loaded with protein-heavy and fibre-rich Organic Black Beans, this colourful salad also uses bell peppers, tomatoes, and corn. We’ve used our Cow and Goat Feta Cheese for tang and creaminess, but you can opt for our authentic Cotija, a salty Mexican-style cheese. Or make it vegan with our Vegan Feta Style Cheese Alternative.

Looking for even more creaminess? Chunks of fresh avocado will do the trick—and provide the added bonus of healthy fats!

Greek Quinoa Bowl

We love how easy this Greek quinoa bowl is to make, especially if you use our Organic Mixed Quinoa Side Dish. Ready in the microwave in just one minute, it takes all the hassle out of assembling these vibrant bowls. If you’re meal-prepping the night before, you can put these bowls together and simply grab and go.

Crisp cucumbers and juicy tomatoes join tangy feta and garlicky hummus for a no-cook lunch that is seriously satisfying. Finished with a drizzle of good olive oil and a pinch of our Fleur de Sel, it’s a quick and easy meal recipe that’s worth looking forward to.

Pepperoni, Sausage, and Pesto Pizza Rolls

You’ve heard of cinnamon rolls, but what about savoury pizza rolls? A surefire lunchtime winner for adults and kids alike, these pizza rolls can be baked the night before. Then, store them in the fridge and zap in the microwave to warm up. We used our Frozen Pizza Dough (thawed overnight in the fridge) so it’s even easier, rather than all the work that goes into making dough from scratch. Crafted with simple ingredients, it’s springy, soft, and an excellent vehicle for these tasty rolls.

One of the best parts about this easy lunch recipe is that you can customize it to your family’s tastes. Swap out the fillings and cheeses for whatever you like best and experiment with your culinary creations.

Herbed Tuna and Chickpea Salad 

If hitting your protein goal has been a problem, this salad is your solution. Made with tuna and chickpeas, it’s hearty, delicious, and requires no cooking at all. If you can stir ingredients together and open a couple cans, you can make this simple lunch—it really is that easy.

With a flavourful dressing and plenty of fresh veggies, this salad can be prepped ahead of time, stored in an airtight container in the fridge, and grabbed before you head out the door. Filling enough to keep you satisfied until you come home, it’s a healthy lunch that doesn’t skimp on flavour.

This recipe is also easily customizable if you follow the packing directions: Start with dressing on the bottom, followed by strong ingredients and proteins, with fragile items (think leafy greens) at the top. This is a great one for work or school lunches, especially if you’re trying to reduce waste. Dump it into a bowl, mix it up, and enjoy!

Mediterranean Barley and Chickpea Salad

For a satisfying, wholesome, and healthy salad recipe, look no further! Full of whole grains, beans, and fresh veggies, it’ll keep you coming back for more. Included in this dish is our Greek Dressing. Prepared in Ontario with simple ingredients, it has a classic, homemade taste. 

To ensure the best results, chill this salad at least 30 minutes ahead of time. Not only will this allow the flavours to meld together, but it also makes it easier for meal prepping. This versatile, budget-friendly recipe makes the best of Farm Boy fresh produce and can be easily adjusted to include your favourite beans, herbs, or cheeses.

Korean BBQ Chicken-less Rice Bowl

Colourful, fun, and delicious, rice bowls are an easy way to add some plant-based pizzazz to your diet. By simply swapping out the veggies, proteins, and sauces, you can travel the world when it comes to flavour profiles.

This vegan recipe uses Korean flavours with the help of our Korean BBQ Grilling Sauce. A little sweet and a little sour, it punches up our Vegan Chicken-Less Tenders. We opted for purple cabbage, zucchini, carrots, and edamame for our veggies, but you can use your favourites to make this dish your own. For easier prep, air-fry the protein before tossing with sauce and using our Organic Jasmine Rice Side Dish, which cooks in only one minute.
