Herbed Tuna and Chickpea Salad Recipe

Chef’s Tips:
* Delicious add-ins would be pasta, olives and/or baby arugula.
* If you feel like combining pulses, use the same amount of any other canned beans you have on hand.
* Instead of lemon juice, you can use lime juice or Farm Boy™ Red Wine Vinegar.
Ingredients
- juice of 1 large lemon
- 1 tsp Farm Boy™ Garlic Flowers
- 1 tsp Farm Boy™ Dijon Mustard
- ½ tsp Farm Boy™ Sumac Seasoning optional
- salt and pepper to taste
- 6 Tbsp extra virgin olive oil
- ½ cup thinly sliced red onion
- 1 can Farm Boy™ Chunk Light Tuna Skipjack in Oil drained and broken into small pieces
- 1 can Farm Boy™ Organic No Salt Added Chickpeas drained and rinsed
- 1 bell pepper stemmed, seeded, and diced
- 2 Lebanese cucumbers diced
- 1 cup grape or cherry tomatoes halved
- 2 Tbsp Farm Boy™ Nonpareil Capers drained
- ¼ cup chopped parsley
- ¼ cup chopped cilantro or basil
- ½ pack Farm Boy™ Sheep's Milk Feta Cheese cubed
Directions
- In a large bowl, combine lemon juice, Farm Boy™ Garlic Flowers, Farm Boy™ Dijon Mustard, Farm Boy™ Sumac Seasoning (if using), salt, pepper, and olive oil. Whisk to emulsify.
- Add red onion and mix to coat it completely with the dressing. Let it pickle in the dressing while you prep everything else.
- Add Farm Boy™ Chunk Light Tuna Skipjack in Oil, Farm Boy™ Organic Chickpeas, red peppers, cucumbers, tomatoes, Farm Boy™ Nonpareil Capers, parsley, cilantro, and Farm Boy™ Sheep’s Milk Feta Cheese. Toss well and serve.
