Mediterranean Quinoa Bowl

Directions

  1. In two medium bowls, mound the cooked quinoa.
  2. Spoon hummus beside quinoa.
  3. Arrange grape tomatoes, olives, cucumbers and feta cheese beside quinoa and hummus.
  4. Finish with a drizzle of olive oil and a sprinkle of fleur de sel.
  5. Serve with lemon wedges and naan bites.

Ingredients

  • 2 cups Farm Boy™ Quinoa , (from 2/3 cup raw) cooked.
  • 1 cup Farm Boy™ Roasted Garlic Hummus
  • 1 cup Grape tomatoes , halved.
  • 1/2 cup Kalamata olives
  • 2 Lebanese cucumbers , sliced.
  • 1/2 cup Feta cheese , cubed.
  • 2 tbsp Farm Boy™ Spanish Olive Oil
  • 2 Lemon wedges
  • Farm Boy™️ Fleur de Sel
  • Microgreens for garnish.
  • Farm Boy™ Naan Bites
