Yellow corn tostada with black beans, pico de gallo, avocado, and cilantro for a healthy recipe

Black Bean Tostadas

There are open-faced sandwiches and then there are tostadas. In Spanish, “tostada” means “toasted”, and the corn tortillas in this recipe get a little heat from the frying pan to make them nice and crispy.

To get the most flavour out of the black beans in this recipe, be sure not to drain them. Mash them with their liquid instead to get the best texture and taste. Topped with our Vegan Feta-Style Cheese Alternative, these tostadas are a great source of fibre, protein, and iron.

Dietary: Vegan, Gluten-Free

We’ve made this soup with our Organic Chickpeas, but you can add any beans you like best. A source of plant-based protein, iron, and fibre, beans are a delicious, budget-friendly way to add nutrition to any meal. If you’re cooking this soup for vegans or vegetarians, be sure to use a plant-based Parmesan (like our Vegan Parmezzan) or one that doesn’t contain animal rennet. Fortunately for those who are trying to eat more healthfully, the crispiness of this dish comes entirely from the yogurt marinade and cooking method.

It’s fermented, which means it’s easier to digest and for your body to pull those all-important nutrients. It’s a great source of protein as well as fibre.

In this recipe, we’ve paired tempeh with an aromatic, nutty peanut ginger sauce. Tossed with yummy veggies like carrots, broccoli, and snow peas, this vegan dish is a great way to incorporate a meatless swap into your weekly dinners.

Silken Tofu, Chocolate, and Peanut Butter Mousse

Another recipe that blends chocolate and peanut butter is this silky smooth mousse. This recipe—like many other dessert recipes here—requires zero cooking. However, it does need to be chilled for at least an hour to set properly and maintain that luscious texture.

There are plenty of modifications to make this recipe work for you. You could make this low-sugar by subbing in Farm Boy™ Erythritol, a natural 1-to-1 sugar replacement. Or, you could skip the cookie chips and instead garnish with dried shredded coconut, cacao nibs, or hemp hearts. If you’re allergic to nuts or have a sensitivity, you can omit the peanut butter and make this a chocolate mousse instead.

We’ve used cashew butter in this recipe, but you can use peanut butter or our Sunflower Seed Butter if you’re nut-free. With a sprinkle of hemp hearts and chia seeds (or all-natural “sprinkles”, as we like to describe them), this fun recipe is great for snacks, breakfast, and even dessert.
