If you’re a fan of granola and energy bars, then we have a great recipe for you!

In our quest for eating and cooking wholesome, healthy and delicious food, we developed this recipe for nutty date energy bars. You can make these on the weekend and have them ready to pack into school or work lunches.

This recipe comes together quickly in the food processor. It needs to bake so the bars dry out enough so they keep their shape. We like ours fairly small, but feel free to make larger bars if that’s what you like. Wrap them in parchment or wax paper and you’ll be set for the week!

Directions

  1. Place dates, walnuts, pumpkin seeds, and oats in the bowl of a food processor.
  2. Process until mixture is uniform but still has some texture.
  3. Add maple syrup, chia and flax seeds, hemp hearts, vanilla, cinnamon and salt and process until mixture comes together.
  4. Place on parchment covered baking sheet and press evenly into a rectangle that is ½” thick (9” x 7”).
  5. Using a knife, cut into 24 bars, approximately 1 ½” x 2”.
  6. Bake at 250°F for 20 minutes, until bars feel a bit dry to the touch. Cool to room temperature and enjoy!
