If you’re a fan of granola and energy bars, then we have a great recipe for you!
In our quest for eating and cooking wholesome, healthy and delicious food, we developed this recipe for nutty date energy bars. You can make these on the weekend and have them ready to pack into school or work lunches.
Our recipe calls for walnuts and pumpkin seeds, but you can use any kind of nut you have on hand – they would be delicious with pecans or almonds, and you can throw in some raisins or cranberries for colour and tang. As far as the super seeds, you can use whatever variety you like, as long as you keep the quantities the same. Sweeten with maple syrup, as we have done, but if you prefer honey or some other sweetener, go ahead and use whatever you fancy.
This recipe comes together quickly in the food processor. It needs to bake so the bars dry out enough so they keep their shape. We like ours fairly small, but feel free to make larger bars if that’s what you like. Wrap them in parchment or wax paper and you’ll be set for the week!

Using a knife, cut into 24 bars, approximately 1 ½” x 2”.
