When you’re planning your breakfasts for the week, make a batch of this coconut chia pudding, as it keeps well for days. You can top it any way you like, from fruit to nuts to seeds or dried fruit.
The most important thing to know about this recipe is to mix the chia seeds properly with coconut milk. If not, you will have a lumpy pudding, and nobody likes that! I use a whisk and make sure the chia is well distributed in the liquid before placing it in the fridge to thicken.
Directions
- In medium bowl, combine Farm Boy™ Organic Coconut Milk, chia seeds, Farm Boy™ Amber Maple Syrup, and vanilla.
- Mix very well so chia does not clump.
- Cover and refrigerate for 4-6 hours, until pudding has thickened.
- Serve in small bowls, garnished with berries, shredded coconut, and almonds.

- 2 Tbsp Farm Boy™ Amber Maple Syrup or more to taste
- 1/2 tsp vanilla extract
