Hello, spring! The sun is in the sky and the warmer weather is on its way. With these welcome changes, spring also brings beautiful, fresh produce that brightens up our plates and our palates. At Farm Boy, we pride ourselves on offering the best and freshest produce to our customers. Items like asparagus, green peas, and organic herbs are at their peak and we love the opportunity to show them off in dishes created especially for you by our chefs! From starters and sides to mains and desserts, we’ve got five recipes that will fill you up this season!

Fresh Herb Salad

Spring is synonymous with freshness, and this Fresh Herb Salad is easily accessible to anyone with a green thumb, whether you’ve got a full-on garden or a condo-sized window box! (Not able to keep even a cactus alive? No problem! We used our selection of organic herbs – think dill, parsley, basil, and mint – which can be found at your favourite Farm Boy location!)

Lightly dressed with our Apple Cider Vinaigrette and garnished with roasted pumpkin seeds and Grated Parmesan, you can up the Instagrammable-factor with a few well-placed edible flowers!

Sweet & Sour Pan-Fried Asparagus

With the weather heating up, why not bring a little added spice to your sides? Asparagus comes into season in Ontario in the springtime and these crisp, thin stalks are a quick and tasty way to take advantage of their fresh flavour! A simple sauce made using our Spicy Bomba, Pure Ontario Honey, and White Wine Vinegar livens up the asparagus, and a garnish of toasted slivered almonds provides much-needed texture.

Creamy Tortellini with Peas and Pancetta

Bask in the sunshine and take a culinary trip to northern Italy with us! Tiny fresh peas in the produce aisle are one of the first signs that spring has sprung, and when they’re combined with salty pancetta, it’s a match made in flavour heaven. We used our Fresh Cheese Tortellini to better complement the creamy sauce and make for an easier prep time during those weekday dinners (it cooks it only 3-4 minutes!).

Green Spring Vegetable Rice

Got a craving for fried rice with a Mediterranean twist? We’ve got you covered! To make the prep for this dish even easier, cook the rice the night before and use it cold! Featuring our zippy Arugula Pesto and a kick of heat from chopped jalapeño chili, it’s a unique and tasty way to really eat those greens! For those who follow a plant-based diet, try making it with our Vegan Pesto and Vegan Feta!

Lemon Mascarpone Tart

Lemons for springtime? Groundbreaking. However, all the fresh flavours of spring mean that we need an equally refreshing dessert! Using our Farm Boy™ Dessert Shells makes this dish a breeze to create while still keeping it delicate enough to serve at an afternoon tea or after dinner. A simple lemon cream is made using mascarpone, whipping cream, and our Lemon Fruit Curd. Garnish these tarts with a selection of any of our fresh berries offered at the front of every Farm Boy store!
