Easy Chicken Lo Mein Recipe for Dinner

Our version of the beloved Chinese takeout dish comes together in less than 30 minutes for an easy weeknight dinner.

Packed with tender chicken, vibrant veggies, and our signature Farm Boy™ Chow Mein Noodles, it’s tossed with a savoury sauce that’s sure to replace your next takeout order. Simple, delicious, and ready in less than 30 minutes, keep this recipe close for when you want something convenient and tasty. 

 

Ingredients for Chicken Lo Mein 

Chicken: Arguably the star of this chicken lo mein recipe is, well, the chicken. You can use chicken breast or chicken thigh. Chicken thigh meat has a greater depth of flavour, but chicken breast may be a more accessible cut for novice cooks. Whichever cut you choose, be sure to cut it thinly against the grain so it’s tender instead of tough. 

Noodles: The co-star to this chicken lo mein stir fry is the noodles. We used Farm Boy™ Chow Mein Noodles in this recipe. They’re fresh, cook in about three minutes, and are perfectly slurpable. We also love how our sauce clings to them for a wonderfully umami-filled bite. If you don’t have chow mein noodles (or a similar style) on hand, you can use spaghettini (a thinner style of spaghetti) for a similar effect. Cook them until they’re just al dente with a nice chew. 

Veggies: You can customize this recipe with your favourite fresh vegetables, but we have some that we prefer for this dish. This chicken lo mein recipe uses bell peppers, carrots, green onions, and baby bok choy. However, you can choose what you like! Some other yummy veggie suggestions are: oyster mushrooms, snow peas, celery, broccoli, and shiitake mushrooms. 

Chicken broth: Rather than using water and diluting the flavour of our lo mein sauce, we used chicken broth. We opted for Farm Boy™ Organic Low Sodium Chicken Broth, which helps control the salt level in the dish and prevents things from tasting too one-note. It contains no artificial flavours or colours and is ready to heat and enjoy. If you don’t have chicken broth on hand, our Organic Low Sodium Vegetable Broth or Organic Low Sodium Beef Broth work well, too. 

Oyster sauce: To really add oomph to this lo mein sauce, we added just a touch of oyster sauce. This flavourful ingredient is rich in umami and even offers a subtle sweetness. 

Cornstarch: To ensure that our sauce properly coats all those fresh noodles, we need to make it thick enough. Cornstarch is a great thickener that doesn’t detract from the overall flavour. Our Farm Boy™ Cornstarch is 100% pure and a versatile ingredient in any kitchen. 

Soy sauce: Savoury, salty, and full of umami, it’s soy sauce. Some recipes may call for dark soy sauce, but we like our naturally brewed Farm Boy™ Soy Sauce for this recipe. It’s crafted with quality ingredients and rooted in three generations of Japanese brewing tradition. Naturally aged for up to a year, it enhances the overall flavour of the lo mein sauce. 

Sesame oil: Sesame oil is unlike many other neutral oils used in cooking. This oil has a rich, toasty, nutty flavour that further develops the other ingredients in the lo mein sauce. We only use a little bit but promise that it makes a huge difference in the overall taste of this chicken lo mein recipe. 

 

Additions and Substitutions 

Swap the protein. While we like chicken for its ease, convenience, and protein, there’s lots of other options you can swap. You can choose to make this lo mein recipe vegetarian by using fried tofu and our Organic Low Sodium Vegetable Broth. (You will need to remove the oyster sauce in this modification to make it fully vegetarian. Hoisin sauce would work well.) You could also try swapping the chicken for other proteins like beef, pork, or shrimp. Add more veggies. One of the best parts about this chicken lo mein is how you can customize it based on your preferred veggies. With our delicious savoury sauce, you could try different variations to see which vegetables work best. We also like broccoli, zucchini, green beans, edamame, snow peas, spinach, mushrooms, Chinese broccoli, and more. 

Use different toppings. We chose green onions and sesame seeds as the toppings for this. We like the subtly nutty flavour and crunch of the sesame seeds and the crisp, sharp taste of the onions. However, you can add plenty of different toppings to this recipe. Some suggestions are: cashews, peanuts, and crunchy chow mein noodles. 

Make it nutty. In addition to sprinkling some nuts on top of this lo mein recipe, you can also try adding a nutty element directly into the dish itself. When making the sauce, consider adding a tablespoon of your favourite nut butter. A natural nut butter without all the added sugar and preservatives would be a delicious choice that adds a nutty, umami taste. For the inclusion we suggest Farm Boy™ All Natural Smooth Peanut Butter or Farm Boy™ Cashew Butter. 

Spice things up. While this recipe is definitely packed with loads of savoury flavour, maybe you’re the type who likes a bit of heat in their chicken lo mein. If your taste buds crave some spice, you have options: Finish the dish with a sprinkle of Farm Boy™ Organic Crushed Chili Peppers; add a few drops of hot sauce like Farm Boy™ Heat Wave Fusion Hot Sauce; or swirl in a chili crisp condiment. 

 

How to Store Chicken Lo Mein 

Chicken lo mein actually tastes just as delicious when enjoyed as leftovers as it does when made fresh! To ensure you’re getting the best flavour and texture in your recipe, store your leftover lo mein in an airtight container. Keep it in the fridge for up to three days or stored in the freezer (labelled) for up to three months. 

To reheat, you can use the microwave, stirring occasionally to ensure even cooking. Or, you can reheat in a pan on the stove, again stirring. You may need to add a bit of water to loosen the sauce a bit when cooking.
