Chicken Tikka Skewers with Spicy Cilantro Chutney

Chef’s Tips:
* If you have metal skewers, use them instead, they don’t require soaking and they’re reusable!
* You can prepare a double batch of the chicken in the marinade and then freeze half of it, making your prep way faster next time.
* For another presentation, use this chicken in a bowl, adding rice or quinoa, veggies, the chutney, and tzatziki.
Ingredients
- Chicken Marinade
- 1 cup Farm Boy™ Organic Probiotic Yogurt
- 6 cloves garlic peeled and minced
- 3 Tbsp peeled and minced ginger
- 2 tsp Farm Boy™ Garam Masala Seasoning
- 1 tsp Farm Boy™ Organic Turmeric
- 1 tsp Farm Boy™ Organic Ground Cumin
- ½ tsp Farm Boy™ Organic Chili Powder
- 1 tsp Farm Boy™ Organic Paprika
- 1 tsp salt
- 1200 g boneless skinless chicken breast cut into 1 1/2” pieces Wooden skewers
- Spicy Cilantro Chutney
- 1 bunch fresh cilantro (leaves and stems) roughly chopped
- 4 green onions coarsely chopped
- 2-3 green chilis coarsely chopped
- 1 Tbsp peeled and chopped ginger
- ¼ cup fresh lime juice or more to taste
- 1 tsp Farm Boy™ Organic Ground Cumin
- salt to taste
- ½ tsp Farm Boy™ Pure Ontario Liquid Honey
- 2-4 Tbsp extra virgin olive oil
Directions
- In a medium bowl or resealable bag, combine Farm Boy™ Organic Probiotic Yogurt, garlic, ginger, Farm Boy™ Garam Masala Seasoning, Farm Boy™ Organic Turmeric, Farm Boy™ Organic Ground Cumin, Farm Boy™ Organic Chili Powder, Farm Boy™ Organic Paprika, and salt.
- Mix well and then add the chicken cubes. Toss well to make sure chicken is coated well and then cover bowl or close bag and place in the fridge to marinate at least 4 hours (but best if overnight).
- When ready to cook, soak wooden skewers in water for 15 minutes. Remove chicken from fridge and place on skewers.
- Preheat grill to a temperature of 400°F. Clean and grease grill grates.
- Place skewers on grates and cook over direct heat, turning every three minutes, until internal temperature of the chicken reaches 165°F. Total cooking time will be 10-12 minutes.
- Remove from grill and place on a wooden board. Let rest 5 minutes, garnish with chopped cilantro and serve with cilantro chutney, Farm Boy™ Flame-Baked Naan, and Farm Boy™ Tzatziki.
- To make cilantro chutney, place cilantro, green onion, chilies, ginger, lime juice, Farm Boy™ Organic Ground Cumin, salt, Farm Boy™ Pure Ontario Liquid Honey, and olive oil in blender container and blend until smooth. Adjust seasoning. This can be made up to 3 days ahead.
