Chicken and Black Bean Tostadas

Directions

  1. In medium frying pan, heat olive oil and cook onion until translucent.
  2. Add beans with their liquid and mash until smooth.
  3. Cook until warmed through.
  4. Spread beans on tostadas, then top with lettuce, chicken, pico de gallo, feta cheese, jalapeño slices and cilantro leaves.

Ingredients

  • 3 Tbsp Farm Boy™ Extra Virgin Olive Oil (1 L)
  • 1/2 cup onions diced
  • 1 can Farm Boy™ Organic Black Beans (398 ml)
  • 8 Farm Boy™ Yellow Corn Tostadas (350 g)
  • 2 chicken breasts cooked and diced
  • 3 cups lettuce shredded
  • 1 cup Farm Boy™ Pico de Gallo
  • 1 cup Farm Boy™ Barrel Aged Feta (200 g) crumbled
  • 1 Jalapeño pepper diced
  • ¼ cup cilantro leaves for garnish
