
For a meal that comes together in no time, this recipe transforms any Taco Tuesday into a fiesta! Colourful and delicious, it’s a dish that’s quick to make and sure to be a crowd-pleaser. (Have leftovers? Whip up a batch of rice to make tasty chicken burrito bowls for tomorrow’s lunch!)
Directions
- In large bowl, place chicken, onion, bell peppers, garlic flowers, olive oil, fajita seasoning, and salt and pepper to taste. Toss to combine.
- Place on sheet pan in one even layer.
- Cook in a preheated broiler, 3-4 inches from the element. Broil for 15-20 minutes, tossing every 5 minutes, until chicken reaches internal temperature of 165°F and vegetables are tender. (If you don’t have a broiler, bake in the oven at 450°F for 18-20 minutes, until chicken is cooked through and vegetables are tender.)
- Remove sheet from oven/broiler and serve with warm tortillas, guacamole, sour cream, and salsa.
