Ah, baked potatoes. Classic, homestyle, and hearty, they serve as both a delicious side or wholesome dinner, depending on how you dress them up. Crispy on the outside while remaining soft and fluffy on the inside, these humble spuds are beautiful, flavourful, and can be as simple or as extravagant as your tastebuds desire.
All of the below suggested baked potato toppings begin, naturally, with a potato. For the best baked potato, you’ll want a Russet potato. Their skin is thicker than other varieties, allowing a nice crisping and base for all those delicious mix-ins. Then, preheat your oven to 450°F. (While you can bake your potato in a microwave, save yourself the possible explosion and go for the tried-and-true oven.) Prick your potato all over with a fork and place it on either a foil-lined baking sheet, wire rack on a baking sheet, or directly in the rack of your oven. Bake your potato for 20-25 minutes, before removing to brush with melted butter or olive oil and seasoning with salt. Then, return to your oven for another 20-25 minutes until the potato feels soft and gives a bit under pressure.

You can never go wrong with a classic! Picture-perfect baked potatoes—or loaded baked potatoes, as they’re often called—get topped with a nice layer of gooey, melty cheese. Cheddar is a favourite, but we like the flavours of our Farm Boy™ Classic Blend Shredded Cheese, which combines Havarti, Gouda, and Monterey Jack for the perfect cheese pull. Finish your potato with crumbled bacon, a dollop of rich sour cream, and some chopped chives (or green onions), and dig in!
Breakfast Baked Potato
Sure, hash browns are cool and we’d never ditch the breakfast staple from our plates, but this baked potato kicks things up a notch. With all your morning meal faves in one place, this breakfast baked potato puts a spin on the idea of “breakfast for dinner”. To fit in all this goodness, scoop out the inside of your potato after it’s baked before cracking an egg directly into it. Top it with bacon, shredded cheese, and a dash of salt and pepper. Place it back in the oven until the egg has cooked through (about 18 to 24 minutes). Top it with our savoury, crunchy Crispy Fried Onions and enjoy!
Poutine Potato
When you create a poutine inside a baked potato, does that make this dish potato-squared? While the math may be unclear, the flavour is not! We took the best parts about poutine—namely the cheese curds and gravy—and put them inside a baked potato. Once your potato has been baked, cut it open and fluff up the insides. Then, stuff it with as many cheese curds as you’d like! Finish it with gravy and, for added indulgence, a spoonful of caramelized onions. We’ve opted to make this poutine potato plant-based, but you can use your own favourite cheese curds and gravy as well.
Candied Sweet Potato
Who says russet potatoes get to have all the fun? Sweet potatoes are a delicious way to get in on the baked potato scene, plus they have additional nutrients like fibre and vitamin A. Embrace the fall season with this candied sweet potato, which transforms sweet potato casserole into an individual treat! Baked sweet potatoes are stuffed with cooked pieces of Maple Wood Smoked Bacon before getting topped with mini marshmallows. Broil the potatoes just long enough for a little browning and caramelization of the marshmallows. Finish them with a drizzle of Amber Maple Syrup for some extra autumnal sweetness and enjoy your new favourite seasonal side!
Chili-Style Baked Potato
Hearty enough to have as a main, this protein-packed baked potato can be made with any of our chef-prepared chilis. In fact, why not try them all and have a Baked Potato Chili Cook-Off? After you’ve spooned in your chili of choice, top with a dollop of sour cream, our Fiesta Blend Shredded Cheese, and chopped green onions or chives. You can choose any type of cheese you like or have on-hand that shreds, but we like this blend of Monterey Jack, Hot Pepper Brick, and Hot Havarti for a creamy, slightly spicy melt.
Broccoli Cheddar Baked Potato
For a deliciously hearty twice-baked potato that can be made ahead of time, you can’t go wrong with broccoli cheddar! Bake your potato first, then scoop out the insides and transfer to a bowl. Add cream cheese, cheddar cheese, and chopped broccoli and mix well. Season and add milk if it feels a little dry. You can refrigerate this mixture if you’re making these later or scoop it right back into your potato skins. Before returning to the oven to bake, top with more cheddar cheese for extra melty goodness, and serve.
Mediterranean Baked Potato
Set sail for the coast of the Mediterranean with this umami-packed baked potato. Use classic, Mediterranean-inspired ingredients to add some extra oomph to your potato. After baking your potato, spoon a healthy portion of our freshly made Tzatziki, a thick, sour cream-based spread that features garlic, cucumber, and a touch of mint. While olives may seem unusual in a baked potato, trust us: their briny flavour works well with potato’s blank canvas. Chop them finely and sprinkle over the tzatziki, along with crumbles of our authentic Barrel-Aged Feta. Finish with fresh parsley for brightness and dig in!
Jalapeño Popper Baked Potato
Another twice-baked potato idea, this dish transforms the beloved, cheesy, spicy appetizer into a main course! After the first initial bake of your potato, scoop out its insides and mix with the cheeses, diced jalapeños, and chopped, cooked bacon. Be sure to season it to your liking. Place that mixture back into the potato, and top with a bit more cheese, bacon, and jalapeños. Put them back in the oven until the cheese melts and begins to crisp at the edges. Mexican-Style Baked Potato
Step aside, Taco Tuesday, we have a new player in town! Turn regular old potatoes into something worthy of a fiesta. Regular flour or corn tortillas get swapped for a baked potato that’s then filled with cooked, seasoned ground beef. If you don’t have a ton of spices on hand, simply grab a jar of Farm Boy™ Taco Seasoning, a blend that includes chili powder, paprika, and cumin. Fill your baked potato with your ground beef and top with our Fiesta Blend Shredded Cheese and a spoonful of our chef-prepared Fresh Salsa. Pizza and potatoes: two comfort foods that join forces in this baked potato dish. After baking your potatoes, fluff the insides with a fork and ladle in some of our Sugo di Pomodoro Tomato Sauce. Made without any added water, it won’t create a soggy potato. Toss in some pepperoni and top it off with our Italian Blend Shredded Cheese, a mixture made with mozzarella, garlic brick, and Asiago.
