An iconic summer treat, try making decadent lobster rolls for your next backyard cookout! To save on time, use fully cooked lobster (fresh or frozen) chopped into bite-size chunks. Tossed in a simple, flavourful, and creamy mayonnaise-based dressing, this deceptively simple lobster roll recipe is sure to be your next go-to when you want something special.
Lobster rolls are not the place to be skimpy. You want to pack these rolls full of lobster meat so your guests can enjoy that tender, buttery seafood in every bite. Budget about ¼ pound of lobster meat per person or per roll, if using hoagie buns. (Half that amount for our Brioche Pull-Apart Rolls.)
Types of Lobster Roll
When it comes to lobster rolls, plenty of people have a lot of thoughts about them. This lobster roll recipe is for a Maine-style lobster roll. However, there are a few popular types of lobster rolls, such as:
Maine -Style: One of two of the most popular varieties of lobster roll. Maine-style lobster rolls combine chilled lobster meat with mayonnaise, chives, and lemon. Some recipes (like ours) also add celery.
Connecticut-Style: The other popular variety of lobster roll. Connecticut-style lobster rolls simplify things more, using warm lobster drenched in butter and a simple seasoning. There is also often melted butter on the side for dipping.
Long Island-Style: This version is a riff on the Connecticut-style, with extra garlic. Toasted bread is brushed with melted garlic butter and then topped with warm lobster meat.
California-Style: Skip the mayo for California-cool ingredients like mashed avocado and lime and spoon the chilled lobster mixture onto toasted buns.
Cajun-Style: For a spicier take on creamy lobster rolls, season the lobster with Cajun spice (like Farm Boy™ Cajun Seasoning) and toss with a remoulade instead of mayonnaise. (Farm Boy™ Creole Remoulade is made fresh by us for a zesty, bold flavour.) Chop up some dill pickles and mix it all together.
Naked-Style: The purist form of the lobster roll. Warm lobster on a buttered, toasted bun, finished with a squeeze of fresh lemon juice.
How to Make the Best Lobster Roll Dressing
Don’t go overboard on mayonnaise.
Mayonnaise is a great condiment for lobster rolls, but you don’t want to use too much. Lobster has a naturally sweet flavour and it can get easily overwhelmed by too much mayo. Keep the mayonnaise usage light, and add a smidge more if you feel the lobster mixture is too dry. It’s much easier to add mayonnaise than to take it away once it’s in there.
Add some crunch.
Tender lobster meat needs some crunch to keep things texturally balanced. We’ve used minced celery for a bit of crunch and variation in texture to offset the creamy dressing and succulent lobster. Since the lobster is the star of the show, chop your celery into small pieces so it doesn’t compete for attention.
Brighten the flavour.
Rich, creamy mayonnaise and tender, luxurious lobster can feel too heavy if there isn’t something to perk it up. Enter: lemon. We’ve used the zest of one lemon in this recipe, but you can also add a smidge of freshly squeeze lemon juice for more acidity. Only add a little at a time, to avoid the dressing becoming too watery, which won’t allow it to properly cling to the lobster meat.
Use garden-fresh chives.
At Farm Boy, one of the ways we get you closer to the farm is through offering living herbs that you can plant in your home garden. Chives have a mildly onion-like flavour that complements the creamy lobster mixture. We’ve used finely chopped chives both in the lobster mixture and as a garnish on top for added taste and texture.
Season to taste.
One of the most important parts of cooking is seasoning and tasting as you go. Season with salt and pepper and taste to see if your lobster rolls need more. Once you’ve mixed in your lemon zest, decide if it needs a bit more zip. Seasoning and tasting as you go is one of the hallmarks of a chef, and an easy habit to get into as you cook.
How to Store Lobster Roll Mixture
Lobster rolls are best enjoyed the day they’re made, but you can prepare the lobster mixture ahead of time. Once made, store it in an airtight container for up to one day in advance.
What to Serve with Lobster Rolls
Coleslaw
A favourite to pair with lobster rolls, crisp, tangy coleslaw provides a nice contrast to creamy lobster. A lighter side, it’s bright and fresh enough to balance this indulgent seafood recipe while providing an alternate crunchy texture.
Potato Salad
If you’re making these lobster rolls for a backyard cookout, we suggest a side dish to match: potato salad. Potatoes are an ideal pairing for lobster and a casual potato salad is a fun, low-effort option. You can opt for a mayonnaise-based dressing for your potato salad to match the lobster rolls, or choose a mustard-based dressing for a bit of tang and differentiation. And be sure to finish with some fresh herbs!
Corn
When we think lobster, we think corn. While this recipe isn’t for a seafood boil, lobster rolls are as synonymous with summer as fresh, sweet corn is. Be sure to serve them with lots of butter and salt on the side for guests to enjoy!
Potato Chips
A classic at any seaside restaurant that serves lobster rolls is potato chips. We’ve chosen our Sea Salt Potato Chips for this recipe, which are prepared with Canadian-grown dark russet potatoes and kettle cooked for maximum crunch. For added zip, we also recommend our Sea Salt & Vinegar Potato Chips. They’re thick-cut, extra-crispy, and loaded with great flavour to contrast the toasted, slightly sweet bun and tender lobster.

Grilled Scallops with Salsa Verde
Ingredients
- 1 pound cooked, chopped, and cooled fresh or frozen lobster meat thaw overnight if frozen
- 4 Tbsp Farm Boy™ Mayonnaise
- 2 Tbsp celery minced
- 4 tsp chives minced, plus more for garnish
- zest of 1 lemon
- salt and pepper to taste
- 4 Tbsp butter
- 8 Farm Boy™ Brioche Pull-Apart Rolls or 4 small hoagie buns
- lemon wedges for garnish
- Farm Boy™ Sea Salt Potato Chips for serving
Directions
- Place thawed, cooked, chopped, and cooled lobster meat in a medium bowl.
- Add Farm Boy™ Mayonnaise, minced celery, chives, salt, and pepper to taste.
- Mix to combine.
- Melt butter in a large frying pan and place Farm Boy™ Brioche Pull-Apart Rolls or hoagie buns, cut-side down in skillet.
- Toast until bread is golden brown, turning as you go to brown on all sides.
- Mound lobster mixture into warm buns.
- Garnish with more chopped chives and serve with lemon wedges and Farm Boy™ Sea Salt Potato Chips.
