Mediterranean Almond and Plum Cake

Yes, in addition to plums, almonds are actually botanically classified as stone fruits, too! That means that this cake recipe offers a one-two punch when it comes to using seasonal stone fruits. Plums come in many colours, including yellow, red, blue, and black. For this recipe, we’ve opted for red plums for both their beautiful colour and understated sweetness with a tart edge. Plums add sweetness as well as moisture to this cake. An ideal make-ahead recipe for a picnic, cookout, or after-dinner treat, bake this cake the day before you serve it.

Nectarine, Prosciutto, and Burrata Salad

Savour all the flavours of summer with this deliciously seasonal salad. Ripe, juicy nectarines meet salty prosciutto and creamy burrata for a tasty textural explosion. At Farm Boy, we take pride in getting you closer to the farm by offering you the highest quality of seasonal produce available. (Can’t find burrata? Our fresh Buffalo Mozzarella is an excellent substitution.) We love offering up this summer salad because of the short season of stone fruit. If nectarines aren’t your thing, try peaches or plums instead. All work just as well in savoury recipes as they do in sweet!

Summer Fruit Coffee Cake

Make the most of the local summer produce we have arriving fresh to our stores daily by whipping up this coffee cake! Our recipe uses peaches, nectarines, apricots, plums, and raspberries for a delicious balance between sweet and tart. (You can also simply choose your favourite stone fruits.) The fruit in the cake makes it incredibly moist, as does the inclusion of our Almond Flour. Enjoy it dusted with icing sugar or a dollop of whipped cream for a summery dessert or decadent breakfast.

Chocolate Raspberry Fool

While we know them to be berries, raspberries are actually part of the stone fruit fam, too! For a chilled dessert that doesn’t require turning on the oven, this pairing of chocolate and raspberry is a must-make. This easy recipe comes together quickly, but requires time in the fridge, so it’s best made the day before. We used dark chocolate for a more complex flavour, but this recipe works just as well with milk chocolate or semi-sweet. You certainly won’t be a fool for whipping up this simple treat!

Grilled Fruit Platter with Creamy Tri-Nut Dip

Transform summer fruits into a drool-worthy dessert by letting them feel the heat. Grilling fruit allows their natural sugars to caramelize for a flavour that verges on decadent. Summer is a wonderful season for produce, and we love scooping up fresh favourites like pineapple (cored at no extra cost in our stores), peaches, and berries. Cherry Clafoutis

If you’re unfamiliar with clafoutis, it’s a French dish that’s a cross between a cake and a custard. Often used with cherries like we’ve done here, it’s delicious, rustic, and easy to make with the help of a blender. This stone fruit recipe is rich and moist, but also light and fresh, thanks to the sweet-tart cherries. While black cherries are the traditional type used in this dish, you can use whatever variety is your favourite, or switch up the fruit entirely for peaches, plums, blueberries, and more!

Peach, Ginger, and Almond Crumble

One of our favourite summer desserts to share at BBQs, cottage getaways, and more, is a fruit crumble. Since fresh Ontario produce is bursting at our stores, we took advantage of delicious peaches to make this crumble with “A Farm Boy Fresh Twist.” Using fresh ginger for added spice and nutty almonds for crunch, we’ve transformed this peach crumble into something heartier and even more wholesome. Thai Style Mango Sticky Rice

Made with glutinous rice, sticky rice desserts are quite popular in Southeast Asian cuisines. Think of this recipe as a sort of tropical rice pudding. Be sure to soak your rice overnight beforehand for the tastiest results! Juicy mango is the star of this stone fruit dessert, along with sweet, creamy coconut milk. This Thai-inspired treat is also totally plant-based and made with just a handful of simple ingredients. We used Ataulfo mangoes in this dish. Also known as honey mangos, they’re sweet, creamy, and have a wonderfully buttery texture.

The most time-consuming aspect of this fruit-filled dessert is placing fresh raspberries in appetizing, organized rows. Rich and creamy, this fusion of vanilla and raspberry flavours is an indulgent bite of summertime. The natural tartness of the raspberries complements the sweet, luscious filling for a dish that’s designed to wow a crowd.

Yogurt, Nut, and Date Dessert Cups

Yes, the humble date is also classified as a stone fruit. In this simple, no-cook recipe, we’ve used Deglet Noor dates. Deglet Noor dates has a honey-like flavour with notes of nuttiness. (The other common date is Medjool dates, which are softer, stickier, and chewier.) This recipe pulls double duty as both breakfast and dessert, thanks to protein-rich ingredients like Greek yogurt, nut butter, and hemp hearts. If you have a plant-based yogurt you prefer, you can easily make this recipe completely vegan as well. For a little extra stone fruit power, we’ve opted to top these cups with a few fresh raspberries.
