Bean There, Done That 

The Las Chicas del Café Story 

Established by Maria Fiallos and Valeria Fiallos-Soliman in 2005 in St. Thomas, Ontario, the journey of Las Chicas del Café began much earlier in their home country of Nicaragua. The family’s coffee history traces back to Maria and Valeria’s great-grandparents, who settled in the mountainous region of Las Sabanas with their 12 children. Rooted in a legacy of farming, the first coffee variety—Arabica Typica—was planted by their grandfather on the family’s land when he was just 13 years old! Eventually, he opened his own plantation, and his son—Maria and Valeria’s father—followed in the Fiallos family’s footsteps, learning the trade, working on the farm, and eventually starting his own operation. 

A civil war led the Fiallos clan to seek a new beginning in Canada. This is where Maria and Valeria continued the family business. Staying closely connected to their coffee farms in Nicaragua, they source exceptional beans from home, while roasting and processing locally in Ontario. With the family farm still at the heart of it all, they now share its story with customers—one sip at a time. 

Our fondest childhood memories were made on our family’s coffee farm. We spent our mornings walking the coffee plantations with our father, playing on the patios with our grandfather, and partaking in the cherished ritual of mid-afternoon coffee with rosquillas—a true cookie delicacy from Nicaragua. At night, we’d lie on the patios under the stars, listening to our father play guitar. We had our first sips of coffee before our first birthday. And before we could hold a cup, our grandfather would pour a little coffee into his saucer so we could take a few tiny sips. Our children had their first taste of coffee before their first year, and they have also run through the plantations and the coffee patios that saw us grow up.

The Beans

All Las Chicas del Café’s coffee beans are directly sourced and traded from their own family farms as well as local growers. Many of their bold, deliciously aromatic coffees originate from the very land where Maria and Valeria’s grandfather and father cultivated their first crops. It’s where they once picked, pulped, washed, dried, hulled, sorted, and loaded the precious beans onto mules bound for ports destined for Europe. 

Steeped in tradition, the Las Chicas del Café team is deeply committed to quality, community, and sustainability. With decades of experience, they recognize the importance of maintaining a stable, well-cared-for environment. Their plantations reflect a balanced approach to agroforestry—one that begins with natural bacteria and fungi and extends to the wildlife that helps cultivate the essential ecosystem for exceptional coffee. 

Community Mindset 

Las Chicas del Café is guided by stewardship and respect for the land. They understand the challenges faced by small-scale coffee producers. Fair pricing helps growers support their families and protect their environment. Las Chicas del Café advocates for a more equitable market for all producers. They give back through local and international community efforts. In London, Ontario, they sponsor events and donate to local organization like the Big Brothers of London, Hospice of London, and the Women’s Abuse Centre. In Nicaragua, they support health programs, building projects, provide school supplies to children, and more. These initiatives strengthen the communities that have supported them from the beginning. 

Partnering with Farm Boy marked a turning point after heading into year 10 of our coffee roasting journey back in 2014. It all began when Valeria (co-founder of Las Chicas del Café) heard about the opening of their first London store and took a leap of faith by reaching out directly. When Dave from Farm Boy’s grocery team responded with interest in tasting our coffee and hearing our story, it was an incredible moment. We knew that getting into Farm Boy would allow us to connect with more coffee lovers across Ontario. 

More importantly, it meant we could support even more coffee-growing families in our Nicaraguan community. As we continue to grow throughout the province, our partnership with Farm Boy remains a cornerstone of that expansion. A big step for us at the time, it marked the beginning of an exciting new chapter in our coffee story.

Fun Fact: 

One of the earliest coffee crops planted on the Fiallos family farm were Bourbon trees in the 1950’s—an heirloom varietal and a favourite of Maria and Valeria’s grandfather! Though many farmers were switching to more resilient, higher-yielding plants, their grandfather decided to stick with this specialty coffee that’s known for its rich, nutty, and caramelly profile.

Using time-honoured techniques infused with a touch of modern innovation, Las Chicas del Café prepares all its coffees in small batches. Guided by a quality-first ethos, their beans are delivered within 48 hours of roasting—guaranteeing maximum flavour in every brew. Paying homage to their roots in Nicaragua, the Las Chicas del Café Roastery is located in the historic Canadian Southern Railway Station in St. Thomas, Ontario. Built in the 1870s, the station’s origins align with the early days of coffee cultivation in the Las Sabanas mountains of their home region. Blending the farmhouse charm from their past with a vision for the future, Maria and Valeria have created a full-circle moment they proudly share with fellow Canadians.
