- Place ricotta in sieve over a bowl and drain, refrigerated, for 30-90 minutes.
- Place drained ricotta in medium bowl and add honey, cream, lemon zest and juice.
- Whisk until smooth.
- Place in bowl and serve with fruit.

- 3-4 tbsp Honey or to taste
- 2 tbsp Whipping Cream
- 1/2 tsp Lemon Zest
- 2 tbsp Freshly Squeezed Lemon Juice
- Assorted Fruit
