Watermelon and Berry Salad with Tangerine Dressing Recipe

Chef’s Tips:
* This recipe makes a delicious dressing. If you want to have leftovers, simply double the amounts and keep it for green salads later in the week.
* Great leafy add-ins are baby arugula or baby kale.
* If you like a bit of crunch, feel free to add some toasted pumpkin seeds or pistachios and for creaminess, a bit of Farm Boy™ Barrel Aged Feta.
Ingredients
- Tangerine Dressing
- ¼ cup Farm Boy™ Organic Apple Cider Vinegar
- ¼ cup freshly squeezed tangerine juice
- 2 Tbsp Farm Boy™ Tangerine Chili Jelly
- 2 Tbsp cilantro stems optional
- ½ cup + 2 Tbsp extra virgin olive oil
- salt and pepper to taste
- Watermelon and Berry Salad
- 6 cups peeled and cubed watermelon
- ½ cup very thinly sliced red onion
- 3 cups mixed berries (strawberries, blackberries, raspberries, blueberries)
- ½ cup lightly packed mixed herbs (such as mint, cilantro, or basil leaves)
Directions
- In a blender jar, combine Farm Boy™ Organic Apple Cider Vinegar, tangerine juice, Farm Boy™ Tangerine Chili Jelly, cilantro stems, extra virgin olive oil, salt, and pepper. Process until smooth, about 2 minutes. Taste and adjust seasoning if necessary.
- In a large bowl, combine watermelon and onion.
- Add the berries and dressing, then toss gently.
- Mix in herbs and transfer mix to a large platter. Serve immediately.
