Turkey Satay with Creamy Peanut Sauce

Turkey is a healthy and delicious protein that can do much more than grace our holiday table! If you’re used to cooking chicken, switching to turkey is easy, and you can treat it the same way. In this recipe, we are using turkey breast to make some easy and flavourful satay with peanut sauce. If time allows, prep the meat the night before you’re going to cook it and the marinade will fully soak into the turkey for a delicious meal. You can even freeze the meat in the marinade if you wish to meal prep.

*The peanut sauce is flavourful and versatile. If you have leftovers from the satay, use it as a dip for veggies, spring rolls or fried shrimp!  Thin it out with water to make a dressing that goes great with noodles.

Directions

  1. If necessary, flatten turkey strips so they are all about the same thickness. Place in a bowl and add shallots, garlic, ginger, lime zest and juice, soy sauce and coconut milk. Stir to coat well and cover and refrigerate for 2 hours or up to overnight.
  2. When ready to grill, thread turkey strips onto soaked bamboo skewers, discarding any marinade. Preheat grill, clean and grease grates and cook skewers over medium high heat for 2-3 minutes per side, until internal temperature reaches 165°F. Serve with peanut sauce.
  3. To make peanut sauce, in medium bowl, combine peanut butter, soy sauce, lime juice, honey, garlic, ginger and chili flakes. Whisk or use an immersion blender to combine. Add just enough coconut milk to reach your desired consistency. Place in a bowl and garnish with chopped peanuts.

  • 600g boneless, skinless turkey breast sliced in to 1/4'' strips
  • 2 shallots minced
  • 2 cloves garlic minced
  • 1 & 1/2 Tbsp ginger minced
  • 1 whole lemon zested & juiced
  • 2 Tbsp soy sauce or fish sauce
  • 1/4 Cup Farm Boy Organic Coconut Milk
  • 24 bamboo skewers soak in cold water for 30 min.
  • Peanut Sauce
  • 3/4 Cup Farm Boy All Natural Creamy Peanut Butter
  • 3 Tbsp soy sauce
  • 1 lime use juice
  • 1 Tbsp ginger minced
  • 1 pinch Farm Boy Chili Flakes
  • 1/3 to 1/2 Cup Farm Boy Organic Coconut Milk
  • 2 Tbsp toasted peanuts chopped
