When we think of berries, we usually imagine sweet desserts, but berries make great savoury condiments if we dare to think outside the box! This dark berry compote is quick to make and makes a delicious topping for baked brie or crostini, a gorgeous sauce for grilled pork, or a flavour-packed condiment for a turkey or chicken burger.
Directions
- In large saucepan, heat Farm Boy™ Extra Virgin Olive Oil over medium heat.
- Add onion and thyme sprigs.
- Cook, stirring often, until soft and golden, about 12-15 minutes.
- Add Farm Boy™ Balsamic Vinegar, Farm Boy™ Amber Maple Syrup, berries, and water and cook until berries soften and break down and mixture thickens.
- Season with salt and pepper to taste.
- Serve with Farm Boy™ Double Cream Brie and Farm Boy™ Baguette Crisps.

- 1 cup blackberries
- 1/4 cup water
- salt and pepper to taste
