When we think of berries, we usually imagine sweet desserts, but berries make great savoury condiments if we dare to think outside the box! This dark berry compote is quick to make and makes a delicious topping for baked brie or crostini, a gorgeous sauce for grilled pork or a flavour-packed condiment for a turkey or chicken burger.

Directions
In large saucepan, heat olive oil over medium heat.
Add onion and thyme sprigs.
Cook, stirring often, until soft and golden, 12-15 minutes.
Add vinegar, maple syrup, berries and water and cook until berries soften and break down and mixture thickens.
