Savoury Dark Berry Compote

When we think of berries, we usually imagine sweet desserts, but berries make great savoury condiments if we dare to think outside the box! This dark berry compote is quick to make and makes a delicious topping for baked brie or crostini, a gorgeous sauce for grilled pork or a flavour-packed condiment for a turkey or chicken burger.

  1. In large saucepan, heat olive oil over medium heat.
  2. Add onion and thyme sprigs.
  3. Cook, stirring often, until soft and golden, 12-15 minutes.
  4. Add vinegar, maple syrup, berries and water and cook until berries soften and break down and mixture thickens.
  5. Season with salt and pepper to taste.


  • 2 Tbsp Farm Boy™ Extra Virgin Olive Oil (1 L)
  • 1 cup sweet or red onion, or shallots diced
  • 3 sprigs thyme
  • 2 Tbsp Farm Boy™ Balsamic Vinegar (500 ml)
  • ¼ cup Farm Boy™ Amber Maple Syrup (250 ml)
  • 1 cup blueberries
  • 1 cup blackberries
  • 1/4 cup water
  • salt and pepper to taste
