Rustic Bacon Wrapped Meatloaf

Chef’s Tips:
* For a sweeter touch, use Farm Boy™ BBQ Sauce instead of Farm Boy™ Organic Tomato Paste. If using barbecue sauce, there’s no need to dilute with water.
* Swap our Farm Boy™ Classic Blend Shredded Cheese for cheddar or Gruyere cheese.
* For faster prep, use a food processor to mince mushrooms and chop onions.
* If you have a probe thermometer, use it in this meatloaf – it will let you know as soon as the meatloaf has reached the right internal temperature.
Ingredients
- 2 Tbsp avocado oil or butter
- 2 cups onion finely chopped
- 240 g mushrooms minced
- ½ tsp salt
- 1 Kg ground beef, pork, chicken, or turkey or a combination
- 2 tsp Farm Boy™ Garlic Flowers
- ½ cup Farm Boy™ Large Flake Oats
- 2 eggs
- 1 cup Farm Boy™ Classic Blend Shredded Cheese
- 1 Tbsp Worcestershire sauce
- 1 Tbsp Farm Boy™ Dijon Mustard
- 2 ½ Tbsp Farm Boy™ Tomato Paste divided
- ½ tsp salt
- ¼ tsp black pepper
- 12 strips Farm Boy™ Maple Wood Smoked Bacon
Directions
- In large skillet, heat oil or butter and add onion, mushrooms, and salt. Cook over high heat until onions are soft, mushrooms release all their liquid, and mixture turns golden, about 10 minutes. Remove from heat and spread on a plate and let cool for 10 minutes.
- Preheat oven to 375°F. Line a sheet pan with foil and place a baking rack on top.
- In a large bowl, combine ground meat, onion, Farm Boy™ Garlic Flowers, Farm Boy™ Large Flake Oats, eggs, Farm Boy™ Classic Blend Shredded Cheese, Worcestershire sauce, Farm Boy™ Dijon Mustard, 1 Tbsp Farm Boy™ Organic Tomato Paste, salt, and pepper. Set aside.
- In a small bowl, combine remaining 1 ½ Tbsp Farm Boy™ Tomato Paste with 2 Tbsp water. Reserve.
- Add cooled onions and mushrooms to large bowl with meat mixture. Mix gently until combined, taking care not to overmix.
- Mound meat mixture over baking rack, shaping it into a loaf form, roughly 10” long by 4” wide.
- Arrange Farm Boy™ Maple Wood Smoked Bacon over meatloaf, slightly overlapping slices to cover the whole surface, then tuck in the ends neatly underneath. Brush all over with tomato paste mixture.
- Bake for 80 minutes, or until the internal temperature of the meatloaf reaches 160°F. If bacon is not crisp, you can place it under the broiler for 2-3 minutes, watching carefully so it does not burn. Let the meatloaf rest for 10 minutes, then slice and serve.
