Roasted Beets on Whipped Feta Recipe

Chef’s Tips:
* This is a beautiful starter, and can be made a day ahead and assembled at the last minute.
* Instead of yogurt, you can use the same amount of Farm Boy™ Cream Cheese Spread.
* This recipe would be just as delicious with carrots instead of beets, or a combination of both!
Ingredients
- Roasted Beets
- 600 g small beets scrubbed, trimmed, and cut into thin wedges
- 4 Tbsp extra virgin olive oil divided
- ½ tsp Farm Boy™ Organic Granulated Onion or Onion Powder
- salt and pepper to taste
- Whipped Feta
- 1 container Farm Boy™ Barrel Aged Feta
- ½ cup Farm Boy™ Organic Plain Greek Yogurt
- 1 tsp Farm Boy™ Garlic Flowers
- zest and juice of half a lemon
- ¼ cup chopped fresh dill and/or parsley for garnish
- ¼ cup Farm Boy™ Salted Roasted Pistachios
Directions
- Preheat oven to 425°F.
- In a medium bowl, toss beets with 2 Tbsp extra virgin olive oil, Farm Boy™ Organic Granulated Onion, salt, and pepper.
- Place on sheet pan and roast until beets are tender, about 25-30 minutes. Remove from oven and let them cool for 5 minutes.
- In a food processor or blender, process Farm Boy™ Barrel Aged Feta Cheese, Farm Boy™ Organic Plain Greek Yogurt, Farm Boy™ Garlic Flowers, 1 Tbsp extra virgin olive oil, lemon zest, and lemon juice, scraping down sides as needed, until smooth, about 2-3 minutes. Season with salt if desired.
- Spread on shallow platter and refrigerate until ready to serve.
- Spoon roasted beets over whipped feta. Sprinkle with dill, Farm Boy™ Salted Roasted Pistachios, and a drizzle of extra virgin olive oil. Serve and enjoy.
