Red Breakfast Chilaquiles

  1. In blender container, process salsa until smooth.
  2. In large frying pan, heat oil and fry tortillas, turning often, until crispy.
  3. Drain oil and add salsa to tortillas in pan.
  4. Over low heat, toss until well coated and warm.
  5. Serve on a bed of warm refried beans, top with fried eggs.
  6. Garnish with feta, sour cream and cilantro.


  • 1 1/2 cups Farm Boy™ Fresh Mild or Hot Salsa
  • 1/4 cup vegetable oil
  • 4 Farm Boy™ Yellow Corn Tortillas (450 g) cut into wedges
  • 2 Tbsp Farm Boy™ Barrel Aged Feta (200 g) crumbled
  • 2 Tbsp Farm Boy™ 14% Sour Cream (500 mL)
  • 2 Tbsp cilantro chopped
  • 2 eggs fried
  • 1 cup refried beans
