Rainbow Pepper Mussels Recipe

Ingredients
- 1 Tbsp extra virgin olive oil
- 100 g Farm Boy™ Maple Wood Smoked Bacon diced
- 1 large shallot minced
- 1 cup rainbow peppers diced
- 1 garlic clove minced
- 1 cup white wine
- 2 lbs fresh mussels cleaned
- 1 Tbsp parsley chopped
- 1 Tbsp cilantro chopped
- 1 baguette for serving
- salt and pepper to taste
Directions
- Clean mussels. Discard any that do not close when lightly tapped.
- In large pot, cook Farm Boy™ Maple Wood Smoked Bacon in extra virgin olive oil until crispy. Remove all but 2 Tbsp of fat.
- Add shallots, peppers, and garlic and cook until softened.
- Add wine, salt, and pepper and bring up to a vigorous boil.
- Add mussels, cover pot and cook for 3-5 minutes, until mussels open.
- Discard any un-opened mussels. Divide mussels among 4 bowls.
- Reduce sauce for 2-3 minutes, then spoon over mussels. Garnish with parsley and cilantro.
- Serve with toasted baguette slices.
