Pistachio Crusted Salmon Recipe

* Feel free to swap the pistachios for almonds or walnuts.
* Serve with a green salad and some roasted vegetables for a healthy dinner.
Ingredients
- 4 x 150 g salmon fillets
- salt and pepper to taste
- 1 Tbsp Farm Boy™ Amber Maple Syrup or Pure Ontario Liquid Honey
- 3 Tbsp Farm Boy™ Herbs & Garlic Mayonnaise
- 1 tsp Farm Boy™ Dijon Mustard
- 2 Tbsp Farm Boy™ Extra Virgin Olive Oil
- ¼ cup finely chopped Farm Boy™ Salt and Pepper Pistachios
- ½ cup Farm Boy™ Panko Breadcrumbs
- ¼ cup grated Parmigiano Reggiano
- 1 clove garlic minced
- grated peel from 1 lemon
- 2 Tbsp finely chopped parsley plus a few leaves for garnish
- lemon wedges for serving
Directions
- Preheat oven to 375°F. Line a sheet pan with parchment paper.
- Season salmon fillets with salt and pepper and place on sheet pan.
- In a small bowl, combine Farm Boy™ Amber Maple Syrup, Farm Boy™ Herbs and Garlic Mayonnaise, Farm Boy™ Dijon Mustard, Farm Boy™ Extra Virgin Olive Oil, chopped Farm Boy™ Salt and Pepper Pistachios, Farm Boy™ Panko Breadcrumbs, Parmigiano Reggiano, minced garlic, lemon peel, and 2 Tbsp parsley.
- Spread this mixture onto salmon, pressing gently to make it adhere.
- Bake for 12-15 minutes, or until internal temperature reaches 158°F. Let salmon rest for 5 minutes, then garnish with parsley leaves. Serve with lemon wedges.
