Phyllo Custard Pie Recipe

Chef’s Tips:
* This is like a bread pudding, only made with phyllo pastry instead of bread.
* If you don’t have a rectangular pan, use a 10” round one, shaping the phyllo sheets in a circular fashion.
* Raspberries are optional, but we think they are delicious.
* This pie is also delicious the next day, gently reheated, in case you have leftovers!
Ingredients
- Phyllo Crust
- 1 pack Farm Boy™ Phyllo Pastry thawed overnight in fridge
- 2/3 cup unsalted butter melted
- Custard Filling
- 1 1/3 cups granulated sugar
- 4 eggs
- 2 egg yolks
- 1 tsp vanilla extract or vanilla bean paste
- 1 tsp baking powder
- 1 ¾ cups Farm Boy™ Organic Whole Milk
- 1 ¾ cups whipping cream
- pinch salt
- 1 Tbsp brown sugar optional
- 2-3 Tbsp icing sugar for dusting
- 1 tsp Farm Boy™ Organic Ground Cinnamon
- ½ cup Farm Boy™ Maple Brown Sugar Pistachios chopped
- 1 cup fresh raspberries, blueberries, or blackberries
Directions
- For the phyllo: Preheat the oven to 400ºF.
- Using a pastry brush, grease a 9” x 13” baking pan generously with melted butter.
- Brush a sheet of Farm Boy™ Phyllo Pastry with butter and line the bottom of the pan. Brush another sheet with butter and place it over the first one.
- Working with the rest of the phyllo one sheet at a time, drizzle with butter and then gather each sheet, gently folding it like an accordion on the long side and transfer to the pan. Be gentle so they don’t flatten.
- Continue buttering the phyllo, placing each sheet gently next to the last, until all sheets are in the pan. Drizzle leftover butter over the top.
- Bake until the phyllo turns golden brown and crunchy, about 18-20 minutes.
- For the custard: While the phyllo is baking, prepare the custard: in large bowl, whisk eggs, egg yolks, and sugar until sugar is completely dissolved.
- Add vanilla, baking powder, Farm Boy™ Organic Whole Milk, whipping cream, and salt. Whisk to combine.
- When the phyllo pastry is golden brown, remove from the oven and turn the heat down to 350ºF.
- Gently pour the custard mixture over the phyllo, making sure it’s evenly distributed over the whole surface. Sprinkle brown sugar over the top. Return to the oven and bake until the top is golden brown and custard has set, about 23-25 minutes.
- Remove from the oven and set aside to cool for at least 10 minutes.
- Dust with icing sugar and Farm Boy™ Organic Ground Cinnamon and garnish with chopped Farm Boy™ Maple Brown Sugar Pistachios and fresh berries.
