Peach Crumble Recipe

Chef’s Tips:
* To make this a vegan recipe, swap out honey for brown sugar, yogurt for vegan yogurt, and butter for Farm Boy™ Organic Coconut Oil.
* Instead of peaches, use the same quantity of apricots, plums, cherries or berries, or a combination of fruits.
* To peel peaches quickly, drop them in boiling water for 1-2 minutes, then into ice water. The peel will come off easily.
Ingredients
- Peach Filling
- 900 g firm but ripe peaches or nectarines pitted, peeled (optional), and sliced (about 5 cups)
- 2 Tbsp peeled and julienned ginger
- 2 Tbsp Farm Boy™ Cornstarch
- ¼ cup Farm Boy™ Pure Ontario Liquid Honey or more to taste
- ½ tsp Farm Boy™ Organic Ground Cinnamon
- 1 tsp vanilla or almond extract
- pinch salt
- Crumble Topping
- 1 cup Farm Boy™ Organic Large Flake Oats
- ½ cup Farm Boy™ Almond Flour
- ¼ cup packed brown sugar
- ¼ cup Farm Boy™ Blanched Slivered Almonds
- ¼ tsp salt
- 1/3 cup Farm Boy™ Organic Plain Greek Yogurt
- ¼ cup melted butter
- pinch Farm Boy™ Organic Ground Cinnamon
- Farm Boy™ Ice Cream for serving
Directions
- Preheat oven to 350°F.
- For the peach filling: In a large bowl, combine peaches, ginger, Farm Boy™ Cornstarch, Farm Boy™ Pure Ontario Liquid Honey, Farm Boy™ Organic Ground Cinnamon, vanilla or almond extract, and a pinch of salt. Mix well and pour onto a 9” square or round baking dish.
- For the crumble topping: Meanwhile, in a medium bowl, place Farm Boy™ Organic Large Flake Oats, Farm Boy™ Almond Flour, brown sugar, Farm Boy™ Blanched Slivered Almonds, salt, Farm Boy™ Organic Plain Greek Yogurt, melted butter, and Farm Boy™ Organic Ground Cinnamon. Mix to make sure everything is combined.
- Dollop topping over peaches and spread to coat evenly. Bake for 45-50 minutes, until juices are bubbly and topping is golden brown. If your topping is browning too rapidly, cover it lightly with foil during baking.
- Remove from oven and let it cool for 15 minutes. Serve with Farm Boy™ Ice Cream.
