Pan Fried Arctic Char with Spicy Bomba Sauce

Healthy, flavourful, and satisfying, this simple pan-fried Arctic char recipe is one you’ll want to keep making again and again. A mild fish, the taste of Arctic char falls somewhere between trout and salmon. The fattiness of this fish lends itself well to cooking and remains moist and delicious. It has a delicate skin that crisps up beautifully, especially when cooked skin side down.

Wine Pairings for Arctic Char
A medium-firm fish like Arctic char pairs best with an equally medium-bodied wine. Generally speaking, fish goes best with a white wine, as red can overwhelm their delicate nature. However, there are always exceptions to the rule, and Arctic char actually goes quite well with lighter reds. Some of our wine recommendations for this recipe are:
Sauvignon Blanc: Arctic char’s rich texture means it can hold up well with most whites. A citrusy Sauvignon Blanc can help elevate this fish’s mild flavour and cut through any oiliness.

Ingredients
- 3 Tbsp extra virgin olive oil divided
- 1 package Farm Boy™ Arctic Char Fillets thawed overnight in fridge
- Farm Boy™ Fleur de Sel to taste
- black pepper to taste
- 1 Tbsp Farm Boy™ Spicy Bomba
- 1 Tbsp fresh lemon juice
- cilantro leaves for garnish
Directions
- In a large frying pan, heat 1 Tbsp extra virgin olive oil.
- Pat thawed Farm Boy™ Arctic Char fillets dry with paper towel and season with Farm Boy™ Fleur de Sel and black pepper.
- Place Farm Boy™ Arctic Char fillets skin-side down in pan and cook for 3-5 minutes, until skin is golden brown and crispy.
- Flip fillets over and cook for another 3-5 minutes, until internal temperature reaches 158°F.
- In a small bowl, combine the remaining 2 Tbsp extra virgin olive oil with Farm Boy™ Spicy Bomba and fresh lemon juice.
- Remove cooked fish from pan and serve drizzled with sauce and garnished with fresh cilantro leaves.
