No-Bake Berry Coconut Cheesecake Parfaits

Chef’s Tips:

You can substitute graham cookie crumbs for the Farm Boy™ Coconut Cookie Chips.

If you like more sweetness in your filling, increase the amount of icing sugar to your taste.

 If you prefer a saucier dessert, you can smash the berries and even add a bit of sugar to increase the liquid in the berries.

The components of this dessert can be made a day ahead and assembled the day you will serve.

If you use smaller glasses, you can make more servings.


  1. For the crust: In a medium bowl, combine Farm Boy™ Coconut Cookie Chip crumbs and melted butter. Stir until combined. Reserve 2 Tbsp for topping.
  2. For the filling: In a mixer bowl, combine Farm Boy™ Cream Cheese, icing sugar, and Farm Boy™ 14% Sour Cream. Mix with paddle attachment until combined, about 3-4 minutes.
  3. Add vanilla and lemon juice and mix until smooth.
  4. Add whipping cream and mix until smooth, about 3-4 minutes.
  5. To assemble the parfaits, layer cookie crumb crust, cheesecake filling, and berries between 6 glasses.
  6. Finish with cheesecake mixture and garnish with fresh berries and reserved cookie crumb crust.
  7. Chill for 1 hour, then enjoy.

  • 1 box Farm Boy™ Coconut Cookie Chips (170 g) processed into crumbs
  • 2 Tbsp unsalted butter melted
  • Filling
  • 500 g Farm Boy™ Cream Cheese Spread (500 g) room temperature
  • 1 cup icing sugar
  • 2 tsp vanilla extract
  • 1 Tbsp freshly squeezed lemon juice
  • 1/4 cup Farm Boy™ 14% Sour Cream (500 mL) room temperature
  • 1 cup whipping cream
  • 2 cups fresh assorted berries sliced
