Mixed Olive and Sundried Tomato Salad on Labneh

* This olive mixture is extremely flavourful and can be used as part of a pasta salad or a sandwich condiment.
* You can vary ingredients, substitute other nuts or other varieties of olives, and even use Farm Boy™ Giardiniera Pickled Vegetables.
* You can assemble the olive salad ahead of time and only plate it when you are ready to eat.
Ingredients
- ½ cup chopped Farm Boy™ Pitted Green Olives
- ½ cup chopped Farm Boy™ Sliced Kalamata Olives
- ¼ cup Farm Boy™ Walnuts toasted and chopped
- ¼ cup chopped Farm Boy™ Sundried Tomatoes
- ¼ cup Farm Boy™ Extra Virgin Olive Oil
- 1 ½ Tbsp Farm Boy™ Pomegranate Molasses
- juice of one lemon or more to taste
- ½ cup chopped parsley plus more for garnish
- ½ tsp Farm Boy™ Garlic Flowers
- ½ tsp Farm Boy™ Sumac
- ½ tsp Farm Boy™ Organic Crushed Chili Peppers or more to taste
- 1 ½ cups Farm Boy™ Labneh
- toasted baguette or pita for serving
Directions
- In a medium bowl, place Farm Boy™ Extra Virgin Olive Oil, Farm Boy™ Pomegranate Molasses, chopped Farm Boy™ Pitted Green Olives, chopped Farm Boy™ Sliced Kalamata Olives, chopped Farm Boy™ Sundried Tomatoes, and toasted Farm Boy™ Walnuts.
- Add lemon juice, parsley, Farm Boy™ Garlic Flowers, Farm Boy™ Sumac, and Farm Boy™ Organic Crushed Chili Peppers. Mix to combine.
- On a large flat serving plate, spread Farm Boy™ Labneh evenly. Top with olive mixture and spread over labneh, leaving a 1” border all around the edge. Garnish with chopped parsley.
- Serve with toasted baguette or pita bread.
