Mini Toads-in-a-Hole with Jammy Balsamic Onion

Who doesn’t love delicious, eggy Yorkshire puddings? The batter is simple to make, so no need to ever make them from a packet, and there are many tasty uses for it aside from making Yorkshire puddings – like making the classic English breakfast dish, toads-in-a-hole! My toads-in-a-hole recipe features Yorkshire pudding pastry baked with Farm Boy™ Artisan Sausage and sweet balsamic-reduced onions. Whip these up for a delicious party appetizer!
Note: unless your muffin pan is non-stick you may want to brush the sides with softened butter to prevent sticking.
Ingredients
- Mini Yorkshire Puddings
- 1 cup all-purpose flour
- 1 tsp sea salt
- 2 large eggs
- 1 cup milk, whole or 2%
- Filling
- 1 Farm Boy™ Artisan Sausage, your favourite flavour
- 3 Tbsp Farm Boy™ Extra Virgin Olive Oil more or less as needed
- 1 large red onion chopped small
- 2-3 Tbsp Farm Boy™ Extra Virgin Olive Oil
- ½ tsp sea salt
- 1 sprig fresh thyme
- 2 fresh bay leaves (or 1 dried)
- 1 Tbsp brown sugar packed
- 2 Tbsp Farm Boy™ Balsamic Vinegar
Directions
- Preheat oven to 425°F.
- For the Yorkshire puddings: Whisk flour, salt, eggs, and milk in a mixing bowl until smooth and no lumps remain.
- Set batter aside to rest for 30 minutes – we do this to allow the flour to fully absorb the liquids, and to relax the gluten.
- For the filling: Heat a frying pan over medium. Once heated, add Farm Boy™ Extra Virgin Olive Oil, onions, salt, thyme, and bay leaves. Cook for 2-3 minutes, stirring often.
- Reduce heat to medium-low and continue cooking until onions are soft, glossy, and naturally sweet, about 5-8 minutes. Don’t be shy to add up to 1 Tbsp more oil if your pan is looking a little dry.
- Add the brown sugar and Farm Boy™ Balsamic Vinegar and cook 2-3 minutes more until onion is nice and jammy.
- Remove from heat and discard thyme sprig and bay leaves.
- Divide Farm Boy™ Artisan Sausage evenly among 18 muffin cups using kitchen scissors to cut it up into little bits. Top with approximately ½ teaspoon olive oil in each.
- Heat muffin pan (with sausage bits and oil) in oven for 2 minutes.
- Remove muffin pan from oven and carefully top each well with ¼ cup of the batter.
- Place muffins back in oven and bake for 13-14 minutes until puffed up and golden brown at the sides.
- Remove mini toads-in-a-hole to a serving platter and top each with jammy onions.
- Serve warm.
