Chef’s Tips:
* Molletes are a great breakfast or light dinner meal option; add some fried eggs for breakfast or a salad for dinner to make it a more substantial meal.
* If you prefer a vegan meal, omit the chorizo and cheese and use our Farm Boy™ Plant Based Chorizo Veggie Ground and Farm Boy™ Mozzarella Style Shredded Cheese Alternative instead.
* Molletes make a great make-ahead meal. Simply bake and batch and leave the toppings out until you eat them later in the week.
Ingredients
- 1 Tbsp Farm Boy™ Virgin Cold Pressed Sunflower Oil
- 2 Farm Boy™ Chorizo Artisan Sausages removed from casing
- ¼ cup salted butter softened
- 8 thick slices sourdough bread or 4 Portuguese buns, split horizontally in half
- 1 can Farm Boy™ Classic Refried Pinto Beans
- 1 package Farm Boy™ Classic Blend Shredded Cheese
- 1 package Farm Boy™ Pico de Gallo
- cilantro leaves for garnish
Directions
- Preheat oven to 375°F. Line a sheet pan with parchment paper.
- In a medium skillet, heat Farm Boy™ Virgin Cold Pressed Sunflower Oil and add Farm Boy™ Chorizo Artisan Sausages. Cook, breaking sausage apart as you stir, until crumbly, cooked through, and starting to brown, about 6-8 minutes. Reserve.
- While chorizo cooks, butter bread or buns and grill, butter side-down on medium-hot griddle or skillet, for 3-4 minutes, just until golden.
- Spread Farm Boy™ Classic Refried Pinto Beans over buttered bread and then top with cooked chorizo sausage. Top with Farm Boy™ Classic Blend Shredded Cheese and place on prepared sheet pan.
- Bake for 15 minutes, or until cheese is completely melted and starting to brown and bread is warmed through.
- Serve immediately, topped with Farm Boy™ Pico de Gallo and a few cilantro leaves for garnish.
