Maple Almond Cheesecake

Ingredients

• Crust
• 1/4 cup melted butter cooled slightly
• 2 cups Farm Boy™ Almond Flour
• 2 Tbsp granulated sugar
• 1 large egg
• salt pinch
• Filling
• 750 g Farm Boy™ Cream Cheese room temperature
• 1/3 cup Farm Boy™ Maple Sugar
• 1 tsp vanilla extract
• 1/2 tsp salt
• 2 Tbsp flour
• 1/2 cup Farm Boy™ Amber Maple Syrup
• 3 large eggs room temperature
• Maple Caramel Sauce
• 3/4 cup whipping cream
• 1/2 cup Farm Boy™ Amber Maple Syrup
• 1/2 cup Farm Boy™ Roasted Unsalted Almonds
• pinch salt

Directions

1. Preheat oven to 350°F.
2. Grease an 8” springform pan.
3. For the crust: In medium bowl, combine melted butter, Farm Boy™ Almond Flour, egg, and salt. Mix until smooth.
4. Using your hands or a spoon, pat crust evenly into prepared pan, going up 1” the side of the pan. Prick all over with a fork.
5. Bake for 15 minutes and then let cool 15 minutes.
6. For the filling: Place Farm Boy™ Cream Cheese, Farm Boy™ Maple Sugar, vanilla extract, salt, and flour in a food processor or bowl and mix until smooth, scraping down bowl as needed.
7. Add Farm Boy™ Amber Maple Syrup and eggs and mix until thoroughly combined.
8. Pour mixture into prepared pan. Tap pan on counter a few times to remove air bubbles.
9. Place pan on a sheet pan and place in the oven. Bake for 60-70 minutes, or until edges of cake are firm but the centre is still jiggly.
10. Remove from oven and let cake cool completely. Chill thoroughly before adding topping and serving.
11. For maple caramel sauce: In medium saucepan, combine cream and Farm Boy™ Amber Maple Syrup. Bring to a boil and cook over high heat, uncovered for about 6 minutes, swirling the pan often.
12. Reduce heat to low and simmer for another 5 minutes, until thickened.
13. Stir in Farm Boy™ Roasted Unsalted Almonds and salt.
14. Drizzle sauce over cheesecake and serve.
