Korean BBQ Chicken-less Rice Bowls

There is such wide variety of rice bowls that you can make and they are an amazing way to eat – fun, colourful, and healthy! You could eat a different one every day of the week and still not get tired of them. By simply swapping out the veggies and protein, you can travel the world in terms of flavour profiles.
Whatever direction you want to take your rice bowls, let this recipe inspire you to make some wholesome meals for your family!
Ingredients
- 2 Tbsp extra virgin olive oil
- 1 pack Farm Boy™ Vegan Chicken-Less Nuggets thawed
- 1 cup Farm Boy™ Korean BBQ Grilling Sauce
- 4 cups (cooked) Farm Boy™ Brown Rice (from one cup raw)
- 1 cup carrot shredded
- 1 cup zucchini shredded
- 2 cups purple cabbage shredded
- 1 cup Farm Boy™ Organic Shelled Edamame
- ¼ cup green onions sliced
- ¼ cup cilantro leaves
- ¼ cup Farm Boy™ Roasted Peanuts chopped
- 1 lime cut into wedges
Directions
- In medium frying pan, heat extra virgin olive oil and cook Farm Boy™ Vegan Chicken-Less Nuggets until golden and crispy, about 5 minutes.
- Add Farm Boy™ Korean BBQ Grilling Sauce and bring to a simmer. Reserve.
- Divide cooked Farm Boy™ Brown Rice amongst 4 bowls.
- Top with Farm Boy™ Vegan Chicken-Less Nuggets in sauce, carrot, zucchini, purple cabbage, Farm Boy™ Organic Shelled Edamame, and green onions.
- Garnish with cilantro leaves and Farm Boy™ Roasted Peanuts.
- Serve with lime wedges.
