Jewelled Mixed Grain Pilaf

* Mixing grains in this pilaf is easy, just make sure whatever you choose cooks in roughly the same amount of time; you can try buckwheat, spelt, Black Beluga or duPuy lentils, wild rice, rice, quinoa, and pearl barley interchangeably.
* If you want to make this vegan, swap out the goat cheese for Farm Boy™ Vegan Feta Style Cheese Alternative.
Ingredients
- 1 Tbsp extra virgin olive oil, avocado oil, or butter
- 1 cup minced onion
- 2 cloves garlic minced
- ¼ cup Farm Boy™ Pearl Barley
- ¼ cup farro
- ¼ cup Farm Boy™ Tri Colour Quinoa rinsed
- ¼ cup wild rice
- 2 cups Farm Boy™ Organic Low Sodium Vegetable Broth
- salt and pepper to taste
- ¼ cup chopped dried apricots
- ¼ cup golden raisins
- ¼ cup chopped parsley
- 1/3 cup Farm Boy™ Salted Roasted Pistachios shelled and chopped
- ½ cup pomegranate arils
- ½ cup Farm Boy™ Crumbled Goat Cheese
Directions
- In a medium saucepan, heat olive oil over medium heat and cook onions, stirring often, until golden brown, about 7 minutes.
- Add garlic and stir for a minute, then add Farm Boy™ Pearl Barley, farro, rinsed Farm Boy™ Tri Colour Quinoa, wild rice, Farm Boy™ Organic Low Sodium Vegetable Broth, salt, and pepper. Bring mixture to a slow boil and then turn heat down to keep it at a gentle simmer. Cook, covered and undisturbed, for 25 minutes.
- Check pot to make sure all liquid has been absorbed and if there is still some liquid, let it cook for another 5 minutes. Once all liquid has been absorbed, add apricots and raisins and let it rest, covered, for 10 minutes.
- Add parsley and fluff gently with a fork.
- Serve, garnished with Farm Boy™ Salted Roasted Pistachios, pomegranate arils, and Farm Boy™ Crumbled Goat Cheese.
