Huevos Rancheros Recipe

Huevos Rancheros is a classic Mexican breakfast that’s sure to satisfy. Soft fried corn tortillas are topped with slices of ham and crowned with beautiful fried eggs. Served with two different kinds of salsa and a sprinkling of feta cheese, this dish is sure to become one of your favourites.
(This is a perfect meal when you have leftover ham from your holiday feast, but you can also use thinly sliced deli ham.)
Ingredients
- 3-4 Tbsp Farm Boy™ Vegetable Cooking Oil
- 4 Farm Boy™ Yellow Corn Tortillas
- 8 thin slices leftover ham
- 4 eggs
- salt and pepper to taste
- ½ cup Farm Boy™ Cotija Cheese crumbled
- ¼ cup Farm Boy™ Fresh Hot Salsa
- ¼ cup Farm Boy™ Fresh Mild Salsa
- ¼ cup cilantro leaves for garnish
Directions
- In medium non-stick frying pan, heat Farm Boy™ Vegetable Cooking Oil and soft-fry Farm Boy™ Yellow Corn Tortillas, about 5 seconds per side
- Place on paper towels to dry.
- In same pan, fry ham quickly, about 5 seconds per side.
- Keep ham and tortillas warm while you fry eggs to your preference.
- Place tortillas on plates, top with ham and fried eggs. Season with salt and pepper.
- Garnish with Farm Boy™ Barrel Aged Feta Cheese, Farm Boy™ Fresh Mild Salsa, Farm Boy™ Fresh Hot Salsa, and cilantro leaves.
