Holiday Focaccia Recipe

Chef’s Tips:
* Note: this recipe requires 2 ½ hours stand time.
* If dough is at room temperature, it will be much easier to stretch.
* You can use anything you have on hand to decorate your focaccia: dried fruits, seeds, or your favourite vegetables.
* Farm Boy™ Fresh Pesto makes a delicious topping for focaccia.
Ingredients
- 2 packs Farm Boy™ Frozen Focaccia Dough thawed overnight in fridge
- 1/3 cup extra virgin olive oil
- 1/3 cup Farm Boy™ Sundried Tomatoes sliced lengthwise
- 5 stems fresh rosemary
- 4 stems fresh flat leaf parsley
- 8 cherry tomatoes halved
- 4 pearl onions or small shallots halved through the stem
- ½ yellow bell pepper
- 2 mini bell peppers sliced into rings
- 4 Tbsp Farm Boy™ Pumpkin Seeds
- 1 Tbsp Farm Boy™ Sesame Seeds
- 1 tsp Farm Boy™ Italian Seasoning
- 1 Tbsp shredded Parmigiano Reggiano cheese
- Farm Boy™ Fleur de Sel
Directions
- Let thawed Farm Boy™ Focaccia Dough rest on counter for 30 minutes to come to room temperature.
- Grease a large cookie sheet generously with olive oil and gently press dough into pan using greased hands, making sure dough reaches the edges. Make dimples on dough using your fingers, then drizzle with more olive oil. Cover lightly with plastic wrap and let it rest for 2 hours or until doubled in size.
- Preheat oven to 400°F.
- To start decorating your focaccia, use the sliced Farm Boy™ Sundried Tomatoes to form the trunk of the tree. Add a few short branches.
- Use fresh rosemary to extend the short branches and add some flat leaf parsley leaves to shape them.
- Decorate the branches with halved cherry tomatoes, bell pepper rings, and halved pearl onions, as if they are hanging ornaments.
- Add Farm Boy™ Pumpkin Seeds as smaller decorations.
- To crown the tree, cut the yellow bell pepper into 6 long triangles and add to the top of the tree, making a star shape. Place a small cherry tomato in the centre.
- Finally, sprinkle the centre of the star with Parmigiano Reggiano cheese, then sprinkle Farm Boy™ Sesame Seeds all over the focaccia, followed by Farm Boy™ Italian Seasoning and a sprinkle of Farm Boy™ Fleur de Sel.
- Bake for 22-25 minutes, until puffed and golden, and all the decorations are slightly browned. Let cool and enjoy.
