Green Beans Almondine

Chef’s Tips:
* For added crunch, add some cooked and crumbled bacon.
* For a plant-based alternative, substitute butter for extra virgin olive oil or avocado oil.
* For a cheesy note, add Parmigiano Reggiano cheese as a garnish.
Ingredients
- 1 Tbsp salt
- 600 g green beans trimmed
- 2 Tbsp butter
- 1 Tbsp extra virgin olive oil
- ½ cup Farm Boy™ Sliced or Slivered Almonds
- 1 large shallot minced (about ½ cup)
- 1 tsp Farm Boy™ Garlic Flowers
- zest of 1 lemon
- lemon juice to taste
- salt and pepper to taste
- ¼ cup chopped parsley
- lemon wedges for serving
Directions
- In a large pot, bring 3 litres of water to a boil. Add 1 Tbsp salt and trimmed green beans. Cook only until crisp-tender, about 3-4 minutes. Remove and dunk immediately in a bowl of iced water. Drain and reserve.
- Meanwhile, heat a large skillet over medium heat. Add butter and olive oil and when butter is foaming, add Farm Boy™ Sliced Almonds. Cook, stirring often, until golden brown, about 2-4 minutes.
- Add minced shallot and Farm Boy™ Garlic Flowers and cook until soft and fragrant, 2-3 minutes.
- Turn off the heat and add green beans. Toss until coated, then add lemon zest and juice, mixing well to coat. Season with salt and pepper to taste.
- Mix in chopped parsley and serve, garnished with lemon wedges.
