Easy Tray Kebab Recipe

Chef’s Tips:
* This is a great one pan dish. You can make the mixture a day ahead if you want to save some time.
* Serve with a garden salad or a bulgur pilaf for an easy dinner.
* If you like a bit of spice, add some fresh chilis or chili flakes to the meat mixture.
* If you have a 12” round pan, use it instead for a very pretty presentation. If you are using a shallow sheet pan, place it on a larger sheet pan when you bake it, in case liquids spill over, but save the pan juices—they are delicious drizzled on the kebab!
* Sumac onions make a great topping. Simply mix 1 cup thinly sliced red onion with 2-3 tsp Farm Boy™ Sumac Seasoning.
Ingredients
- 1 red or white onion roughly chopped (about 1 cup)
- 1 bell pepper roughly chopped (about 1 cup)
- 4 garlic cloves chopped
- 1 cup fresh flat leaf parsley roughly chopped, plus more for garnish
- 800 g ground beef, pork, or lamb or a combination
- 1 Tbsp Farm Boy™ Organic Paprika
- ½ tsp Farm Boy™ Organic Ground Cinnamon
- ½ tsp Farm Boy™ Ground Cumin
- ¼ tsp Farm Boy™ Ground Coriander
- 1 Tbsp Farm Boy™ Sumac Seasoning
- 1 tsp salt
- ½ tsp ground black pepper
- ½ cup boiling water
- 2 Tbsp Farm Boy™ Organic Tomato Paste
- 2 Tbsp butter
- 6-8 mild long peppers
- 1-2 small red onions cut into ½" wedges
- 1-2 Roma tomatoes cut lengthwise into wedges
- Farm Boy™ Tzatziki for serving
- Farm Boy™ Flame Baked Naan for serving
Directions
- Preheat the oven to 400°F, convection if you have it. Grease a 9” x 13” pan, or line with parchment paper.
- Using a food processor, pulse onion, bell pepper, garlic, and parsley until you have a rough paste. (If you don’t have a food processor, finely chop vegetables with a knife.)
- Place the ground meat in a large bowl. Add onion-bell pepper mixture along with Farm Boy™ Organic Paprika, Farm Boy™ Organic Ground Cinnamon, Farm Boy™ Ground Cumin, Farm Boy™ Ground Coriander, Farm Boy™ Sumac Seasoning, and salt. Mix gently but thoroughly.
- Place the meat in the sheet pan. Press the meat gently to a thickness of about 1”, filling the entire pan, making sure to not make the meat overly compact.
- Score the meat with a knife so it will be easier to portion after cooking. Arrange peppers, red onions, and tomatoes on top, making a nice pattern.
- In a small bowl, mix the boiling water, tomato paste, and butter until completely smooth. Drizzle evenly over the meat. Season the top with salt and pepper.
- Roast until nicely browned and cooked through, about 40-45 minutes. If you have a broiler, broil for 3-4 minutes before serving.
- Cool for a few minutes, then garnish with parsley and serve with Farm Boy™ Tzatziki and Farm Boy™ Flame Baked Naan.
