Dill Baked Salmon with Roasted Tomatoes

Directions

  1. Preheat oven to 400°F.
  2. In small bowl, combine Farm Boy™ Barrel Aged Feta Cheese, lemon zest, dill, and a pinch of cracked black pepper.
  3. Rub salmon pieces with ½ Tbsp Farm Boy™ Extra Virgin Olive Oil and season lightly with Farm Boy™ Fleur de Sel and pepper.
  4. Place salmon on parchment-covered sheet pans and top with feta mixture.
  5. In medium bowl, combine tomatoes and 1 Tbsp Farm Boy™ Extra Virgin Olive Oil. Season with Farm Boy™ Fleur de Sel and black pepper to taste.
  6. Place tomatoes alongside the salmon and bake for 15 minutes, or until salmon's internal temperature reaches 158°F.
  7. Dress arugula with Farm Boy™ Lemon Garlic Dressing and serve with salmon and tomatoes.
  8. Garnish with lemon wedges.

  • zest of 1 lemon
  • 1-2 Tbsp fresh dill chopped
  • 4 salmon fillets about 750 g total
  • 2 Tbsp Farm Boy™ Extra Virgin Olive Oil (1 L) divided
  • 1 cup grape tomatoes halved
  • Farm Boy™ Fleur De Sel (240 g) to taste
  • Farm Boy™ Black Peppercorns Grinder (90 g) to taste
  • 3 cups baby arugula
  • 1 Tbsp Farm Boy™ Lemon Garlic Dressing
  • lemon wedges for serving
