Date, Nut, and Chocolate Squares

Chef’s Tips:
* These are very moist and rich bars. You can make smaller portions by cutting into smaller squares.
* If you want to halve the recipe, use a loaf pan instead.
* Wrap individually for on-the-go snacks.
* Note: Cook time is chill time. This is a no-cook recipe.
Ingredients
- 3 cups Farm Boy™ Pitted Deglet Noor Dates chopped
- 2 cups Farm Boy™ Almond Flour
- ½ cup Farm Boy™ Organic Peanut Butter or Almond Butter
- 2 tsp vanilla extract
- 1/8 tsp salt
- 2 bars Farm Boy™ Dark Chocolate chopped
- 1 Tbsp Farm Boy™ Organic Coconut Oil
- ½ cup Farm Boy™ Blanched Sliced Almonds toasted
Directions
- Line an 8” square pan with parchment paper, letting edges overhang.
- In a large bowl, place chopped Farm Boy™ Deglet Noor Dates and cover with boiling water. Let sit for 10 minutes to soften, then drain thoroughly.
- In a large capacity food processor, place drained Farm Boy™ Deglet Noor Dates, Farm Boy™ Almond Flour, Farm Boy™ Organic Peanut Butter, vanilla extract, and salt. Process until mixture clumps around the blade; mixture will be very stiff.
- Press mixture into prepared pan, using a spatula or your hands to level it evenly.
- Meanwhile, in a microwave safe cup, heat Farm Boy™ Dark Chocolate and Farm Boy™ Organic Coconut Oil in 10 second intervals, until chocolate is mostly melted. Remove from microwave and stir to fully melt.
- Top date and almond mixture with chocolate, spreading evenly to the edges.
- Sprinkle with toasted Farm Boy™ Blanched Slivered Almonds and chill for 1 hour.
- Cut into squares. Keep refrigerated.
