Creamy Maple Rice Pudding

Rice Pudding is one of those comfort foods that we all love. Our Maple Rice Pudding is super creamy and thick, and it all starts with the type of rice – our Farm Boy™ Calrose Medium Grain White Rice is perfect for this recipe, and if we make it in a risotto-style, it results in the creamiest concoction. If you want to make this vegan, you can use coconut milk instead of regular milk – it will also be delicious. Top it with fresh berries and a drizzle of maple syrup and enjoy!

Directions

  1. In large saucepan, place rice, milk, water and a pinch of salt.
  2. Bring to a boil, stirring often.
  3. Reduce heat and simmer, stirring often, until rice is tender, 20-25 minutes.
  4. Stir in maple syrup and vanilla.
  5. Serve, topped with berries.

  • 1/2 cup Farm Boy™ Calrose Medium Grain White Rice
  • 2 cups milk
  • 2 cups water
  • pinch salt
  • ¼ cup Farm Boy™ Amber Maple Syrup (250 ml) (or more to taste)
  • 1 tsp vanilla
  • fresh raspberries for garnish
