Rice Pudding is one of those comfort foods that we all love. Our Maple Rice Pudding is super creamy and thick, and it all starts with the type of rice – our Farm Boy™ Calrose Medium Grain White Rice is perfect for this recipe, and if we make it in a risotto-style, it results in the creamiest concoction. If you want to make this vegan, you can use coconut milk instead of regular milk – it will also be delicious. Top it with fresh berries and a drizzle of maple syrup and enjoy!
Directions
- In large saucepan, place rice, milk, water and a pinch of salt.
- Bring to a boil, stirring often.
- Reduce heat and simmer, stirring often, until rice is tender, 20-25 minutes.
- Stir in maple syrup and vanilla.
- Serve, topped with berries.
