Have you ever tried chia seeds? If you haven’t, why not give them a go? These tiny seeds are loaded with fibre, Omega 3’s, protein, are highly nutritious and packed with antioxidants. In short, chia seeds are a superfood!

When you’re planning your breakfasts for the week, make a batch of this coconut chia pudding, as it keeps well for days. You can top it any way you like, from fruit to nuts to seeds or dried fruit.

The most important thing to know about this recipe is to mix the chia seeds properly with coconut milk. If not, you will have a lumpy pudding, and nobody likes that! I use a whisk and make sure the chia is well distributed in the liquid before placing it in the fridge to thicken.
