Classic Niçoise Salad

Directions

  1. Arrange lettuce leaves on large platter.
  2. Top with green beans, roasted potatoes, tomatoes, hardboiled eggs, olives and lemon.
  3. Arrange tuna and anchovy fillets on the centre of the platter.
  4. Drizzle with vinaigrette and sprinkle with salt.

Ingredients

  • 1 head Boston lettuce leaves cleaned
  • 300g French green beans steamed
  • 300g fingerling potatoes halved and roasted
  • 2 cups mini tomatoes halved
  • 4 hard-boiled eggs peeled and halved
  • 1/2 cup Farm Boy™ Jumbo Kalamata Olives (370 ml)
  • 1 lemon cut into wedges
  • 2 cans Farm Boy™ Chunk Light Tuna Skipjack In Water (170 g) drained
  • 8 whole anchovy fillets
  • 1/2 cup Farm Boy™ Mediterranean Dressing (350 ml)
  • pinch salt
